I can't believe the take or leave it attitude of my fellow forum friends! I guess it is a matter of perspective. I have lived in or near Seattle all my life. I have cheered for the Hawks for 20 plus years. I am a true blue Hawk fan. I have the ugly earing to prove it. My son gave me Sea hawk earings when he was five. Basically they are ping-pong balls with earing attatchments and the seahawk on them. I wear them proudly to this day (at least on game days). So I am definately having a Super Bowl party. Being a newbie I definately need all the help I can get on this throwing a party the Celiac GF way. I was famous for my chicken wings BCD (before Celiac Disease)and want the goodies to be yummy. Anyone with some more ideas! Go HAWKS!!!!! |

| Being the serious Seahawk fan that I am. GOOOOO HAWKS I can't wait for the game next Sunday. I am having a bunch over and will providing the food. I would love to offer some delicious appetizers and some good filling football faire. Any one with some GF suggestions? |

I grabbed this from the recipe forum. This is a fave of ours!! Once this made, you can throw it in a crockpot and leave it out for guests to help themselves. We've done this for a few gatherings.
Mr. Al's Beer Chili - ummmm, sans the beer for now - until I get some GF beer I used to put beer in it pre-GF days. Now that I have some GF Beer I can make it like before!!
This is a thick chili. You could add extra water or tomato juice to make it more of a soup consistancy. That's what Peg does to her portion.
1 lb hamburger
1 medium onion - diced
1 half of yellow or orange or red bell pepper - diced (I prefer these over green)
1/2 stalk of celery - diced
1 can of Joan of Arc Kidney Beans - drained
1 can Old El Paso Refried beans (optional - this makes it really thick)
1 can diced tomatoes or fresh if you have them
1/2 to a whole jar of Newman's Mild Salsa
A packet of McCormick's Tex Mex Chili Seasoning. Put in as much as you like. I generally don't use the whole packet.
Maybe a splash of V8 or tomato juice (or GF beer) if it's too thick.
While browning hamburger - add a splash of A1, peppers, onions, celery. After hamburger is browned - drain or soak up any grease. A paper towel works well for that.
Throw in the kidney beans. Give it stir. Add the refried beans. This will make it quite thick. Add the can of tomatoes & salsa. Add a dash of chili powder. Give it another stir. Heck as long as your stirin' you better taste it to see if it needs anything.
I tend to like my chili thick. So I add some tomato juice or a little can of V8. I will let this reduce until it's the consistency I want.
Lately we've been leaving it quite thick. We'll chop up some black olives, dice fresh tomatoes, shread some cheese, maybe a bit of sour cream...and have a chili bar and build our own. Peg will spread out a bunch on a plate and then scoop it up w/ Tostito's (Gold works the best - they're thicker). I will put it in a bowl and scoop it out...or...I put it in a corn tortilla. _________________ Al

Hot Ruben Dip
This is a fave of Peg's. If you happen to have some vegetarian friends like us...you can leave out the beef.
1 8oz packet of Cream Cheese - soft (Philly)
1/2 c Sour Cream (Daisy, Kemps & Dean's)
2 tablespoons of Ketchup (Heniz)
2 tablespoons of 1000 Island Dressing (Kraft)
1/2 lb Corned Beef (Carl Budig's)
1 can Sauerkraut chopped and drained (Frank's, Vlasic, Boar's head)
1 cup Swiss Cheese shredded
2 tablespons of finely chopped onion
GF bread or Blue Diamond Nut-Thins
Mix cream cheese, sour cream, ketchup and 1000 Island until smooth. Stir in corned beef, sauerkraut, swiss cheese and onion.
Put in to 9x13 or 1 quart greased dish. Cover and bake for 375 for 30 min. Uncover and bake for another 5 min or until bubbly.
Serve warm with bread or crackers. _________________ Al

Those are some real good ideas. Thanks so much. I have other people bringing food and I wanted to make sure I had plenty of GF foods so I'm not tempted to just have a taste. It is difficult sometimes I must admit. I'm still learning and I know that I'll discover a lot of GF substitutes to choose from.
The difference between this and just a wieght loss diet is that just a little taste might not keep you from reaching your weight loss goals and in the end not be that big of difference. Just a few extra calories, just a little more time at the gym is all. With CD the mind thing of "you can't have that ever again" can sometimes be hard, especially when I am in a hurry. Old habits die hard, suprisingly even when your sick. I am really trying to plan ahead so I
don't have undo temptations when I am hungry and hurried. I think I have eaten some prepacked things that I thought sounded fine, but because I was hungry I ate them instead of calling or emailing the company to make for sure. Planning ahead is definately the key here I am thinking. Anyway, thanks for all of your help everyone. It is making the world of a difference! |

Saz's BBQ Sauce is GF. I am sure there are others, but this is stuff we use. If you wanted some heat to it...add a few splashes of Tabasco Sauce to it  _________________ Al

| Where do you get these BBQ sauces at? Are they available on the West Coast say, WA? Do you know if they have a telephone number or web address I could contact them with. That would be great, I 'd love to be munchin on some wings and chili come Sunday! |

When ever you see text in blue like Saz's BBQ Sauce is above...that is a link, you can click on it. That will take you to their GF page. There is a contact us button on the bottom of that page. Saz's is from Milwaukee, so I don't know if they ship nationally - I think so, but don't really know.
Here's Sweet Baby Ray's website: http://www.sweetbabyrays.com/thesauce.html. I believe you can get that at just about any larger grocery store.

Yeah! Thanks once again for your help. I am so glad that if I have to have CD it is in a time when there are so many alternatives. So many company's are willing to label clearly or check into their products for you. Not to mention the wonderful support here on the Internet. I can't even imagine what it might have been like for those of you who had Celiac before all of this has come about.  |

I made this chili last night and it was delicious!!!!! My non-Celiac husband loved it and just about licked his bowl
Careful though. I hate to mention this with the McD fiasco going on....
I couldn't find the McCormick's Tex Mex Chili Seasoning, but found several other varieties of chili seasoning by McCormick. Our local Wal-Mart has some new and old packages apparently. I say this because on otherwise identical packages, some of them listed wheat in the ingredients and some did not.
I substituted my own chili powder, cumin, etc. but otherwise followed the recipe. Again. YUMMY!!! Just read, read, read and watch for old label "gotchas." |

You are correct...other chili mixes from McC DO CONTAIN wheat!!! This one does not. That is why I mentioned the exact name Tex Mex Chili Seasoning. Sometimes it is hard to find. When I do find it, I usually buy several packets. I don't use the whole thing, so it lasts awhile.
If you have all those spices on hand - better to use them!!!
