Oh, wow--really?
Believe it or not, the high here today is 53 degrees! It's funny--we had 2 feet of snow over the weekend and now (5 days later) we can already see the grass!!

We don't have any snow but we are getting a terrible cold front from the antartica and will have temeratures tonight at around 9 degrees with expected 40mph winds that with the wind chill factor will drop us down to
-12 here in Olympia! Brrrrrrrr! Of all times, my furnace broke yesterday. The repair person is supposed to be here any time from 1:00-6:00. Wish I could keep a schedule like that. So I will be sticking around the house trying to keep warm! _________________ Connie

Al, are you being nice to Torrey. Remember we are to set an example, oh dear wish I hadn't said that. Would you believe we had 72 on Tues and 71 yesterday. Today only 55 or so. I wish we had some of your snow and I don't even like snow, but it is so dry here and the fires are unreal. One came within 4 miles of our home on Sun. I am just hoping for really nice weather Torrey when we head your direction in May. We are going to Md to see my brother and drive on to Boston to see daughter. Oh, and dkad, I am hoping for nice weather in May, too! Spring is the start of the hot rod show season, and there is one right before Memorial Day. I am certainly keeping my fingers crossed for warmer weather, as we will be taking out the roadster quite a bit!!!  _________________ ~Torrey

I am going to make a big batch of your chili Al and maybe sometype of GF dinner rolls or cornbread if I can find a recipe. Anyone know of a good one for either? I know cornbread is already crumbly and so I always added sour cream when I made it the non GF way, I wonder how it will be GF? _________________ Connie

I have not tried this recipe, but I found it at the Gluten-Free Pantry:
Salsa Cornbread
1 bag Gluten-Free Pantry Yankee Cornbread (#105)
2 Tbs. sugar
5 oz. reduced-fat cream cheese, softened
3 eggs
¾ cup low-fat sour cream
¼ cup butter or margarine, melted
1 can (11-oz.) whole kernel corn, drained
½ cup Mother’s Mountain New England Salsa (#491), not drained
¼ cup finely chopped green onion (optional)
1 cup shredded cheddar or Monterey Jack Cheese (optional)
Preheat oven to 400 degrees.
Lightly grease an 8-inch square pan.
Combine mix and sugar. In a separate bowl, beat together the cream cheese, eggs, and butter.
Mix into dry ingredients just until moistened. Fold in corn, salsa and onion (if used). Pour into prepared pan. Bake 30 min. Remove from oven. Top with shredded cheese (if used) and return to oven to let cheese melt. Serve warm. _________________ ~Torrey

Hey that sounds good!! I made a batch over the weekend and put some in the freezer. Peg just made some corn muffins this morning for breakfast...I wonder of that would work? She says she prefers the GF corn muffins to the wheat based corn muffins she makes - they're lighter & fluffier.
Maybe she'll peek in and post the recipe. _________________ Al

That would be great. Corn muffins would be easier I think than trying to cut the corn bread. The recipe you sent Torrey sounds promising too! You guys always come through for me. My son requested I get some hot coco when I go to the store in a few. That sounded awfully good. Do you guys know off hand if most coco mixes have gluten in them or not? _________________ Connie

I know Nestle Quik is GF...
And Hershey's chocolate syrup is also GF...
I found another recipe on the Gluten-Free Pantry's Web site...again, I don't cook, so I haven't tried this, but it looks easy!
EASY CORN BREAD MUFFINS
6 Tablespoons vegetable oil
2 eggs, lightly beaten
1 cup milk, orange juice or milk substitute
1 cup Muffin and Scone Mix
1 cup corn meal
Beat together oil, eggs, and milk or juice. Add Muffin and Scone Mix and corn meal; mix.
Add milk and mix until smooth. Spoon into greased muffin tins and bake at 350 degrees for 16-18 minutes. Remove from tin and cool.
Yield: 10 muffins. _________________ ~Torrey

Geez it is very cold out there already. I went to put out my garbage and then I saw my poor plants, so I brought the potted ones into the garage and covered them with a blanket. They are just starting to get a few little leaf buds. My Roses are starting to bud out too and then my poor crocus, iris and daffadils have already poked up out of the ground. I will go get some bark if anyone is selling it yet and I maybe put garbage bags over the roses. I don't know what else to do. We haven't had temperatures this low for over a decade  _________________ Connie

News just said that high winds and cold could cause widespread power outages! Pray that our six huge fir trees stay put tonight. I am going to hurry up and go down town and then fix up that chili and muffins now just incase the power goes out. I love cold chili, especially for breakfast. _________________ Connie
