Hi Connie,
Here is the recipe I use for corn muffins-
Easy Corn Bread
1 1/4 cups all purpose GF flour (I use Bette Hageman's Featherlight Mix)
3/4 cup yellow corn meal
1/4 cup sugar
2 tsp GF baking powder
1/2 tsp salt
Scant 1/2 tsp. xanthum gum
1 cup skim milk or milk substitute
1/4 cup vegetable oil
1 egg beaten
Combine dry ingredients, add milk, oil and egg. Mix until dry ingredients are moistened. Pour batter into a prepared 9 inch pan or 12 medium muffin cups. Bake 15 to 20 minutes at 400 degrees. or until a wooden pick comes out clean. I added an extra Tblspn of flour because the batter looked kind of thin.
I like them with honey-butter.
Honey Butter
1/2 cup softened butter
1/4 to 1/2 cup honey (depending how sweet you like it)
Beat together until fluffy. Spread on warm muffins. (mmm just like when I was a kid. It used to be a hot-lunch treat at my school)
Happy baking! I gotta finish my housecleaning so I can work on making greeting cards this afternoon.
We're having scalloped potatoes and ham for supper. Nothing like comfort food in a snow storm!

Thanks Al for posting the cornbread recipe. I have tried several GF ones that you make from scratch and haven't been satisfied. I just tried last weekend the GF pantry Yankee cornbread and it was really good. I just ordered a couple of more when I placed an order this AM. They are now saying we may have ice tonight. My fruit trees are just trying to bloom and it is way too early.
Al how does Peg make your scalloped potatoes? My GF ones just don't turn out looking very good, tastes ok.

Hi Donna,
That was Peg that posted the recipe.
Well, I really don't know as I've not had much involvment with that recipe...it's one of Peg's dishes to make. We kind of have our own things we do...that just happens to be one of hers. I just show up to eat it LOL!!
Maybe she'll check back in again (if she can tear herself away from cardmaking and post that too.
Man...it's a good thing it's lunch time...cuz I'm getting hungry. I'm gonna hitch up my sled dogs and see if I can make it home for lunch.

Hi Donna,
My scalloped potatoes are pretty easy, I make them the way my mom all ways did..... with cream of mushroom soup (I am the queen of cream of mushroom soup! )
Scalloped Potatoes
8 to 10 medium potatoes-peeled and sliced thin
1 med onion-sliced thin
1/4 to 1/2 cup crushed gf crackers (any kind will do)
1 can Progresso cream of mushroom soup (it is GF)
cubed ham (however much you like)
Mix all together, pour into a prepared casserole dish and bake at 325 degrees for 1 to 1 1/2 hours. (the time is an estimate-I usually test them with a fork and stick my finger in middle to make sure they are hot all the way thru
)
Mom used Oscar Meyer Little Smokies in place of the ham. I am not sure if they are GF as I learned very early in our marriage that Al doesn't care for them.
As you can see I am not a very "by the book" cook. I do a lot by how things look and feel. But it seems to work as I haven't had too many complaints )
Hope this is something you can use.

I read this sentence and I thought well Al has 'come out of the closet' to all of us here. I then thought what's the deal with Peg if he's gay. As I read further down I realized that Peg wrote the post.
Anyway, the scalloped potatoes sound good and comforting. Perfect food for a snowy/rainy February day.

No snow in our forcast, but supposed to get really cold! It is 56 out right now with tornado warnings out. This weather is nuts! You all take care out there and I hope no one loses power.

I got all my flowers covered with plastic, antifreeze and de-icer in my car, went shopping, washed laundry, made the chili and corn muffins (The were both delicious by the way! I combined both Peg's and Torrey's recipe for the muffins), took my son around the neighborhood for driving practice and yet the furnace repairman has still not shown up. I called they said he is running late. You don't say? I am so glad I made sure to stay home all afternoon!  _________________ Connie

We were supposed to get snow today as well. Unfortunately, we've had thunderstorms on and off all day. I'll take snow over rain anyday.
Al, I guess you and Peg won't be grilling tonight.

I totally agree with you, TEC, though, in the fact that I would much rather have snow over this icky drizzle of a rain that goes right through you!
It's almost 50 degrees here now, but it's exceptionally windy and is supposed to drop down to about 35 degrees by the time the sun goes down.
On Saturday, the high is 35 and on Sunday, the high is 32, with a low of 0. Yup, ZERO! _________________ ~Torrey

The repairman came at about 6:30pm and low and behold didn't have the part for the furnace that was needed and because it was so late could not get it. So we went all night without it. Temperatures around 10 degrees this morning with lots of wind. We are not alone, about 11,000 folks just north of us are with out power. Thankfully, we still have out power. At least I can bake and drink hot coco and have an excuse to sit around in a blanket on the couch and read all day! _________________ Connie

No we still do not have our furnace but luckily we did not lose our power in the wind storm like many did. He tried a couple things and then hinted that it was because we needed a new furnace. I think it is because he didn't know what he was doing. We are using electric heaters, and it certainly isn't as cold as you guys are. We don't have snow either, in fact it is a beutiful, blue sky, sunny day! Not shorts and tank top weather but they say it should start warming up. _________________ Connie
