My daughter is doing a ethinic recipe day at school today. We are American Indian and German, mixed with a bit of this and that. I hunted for an easy recipe to make in a hurry. What I found was Spaetzle, a mini dumpling like, pasta-ey thing. I have never had it before but I really like it and I made it GF of course. This can be eaten with a variety of toppings or sauces, I chose cheese.

IN A LARGE SAUCE PAN boil water with a dash of salt.

IN A SMALL BOWL MIX:
2 eggs
1/2 c milk I am sure water would work
1/2 c tapioca flour
1c Rice flour plus a tablespoon or so.
1/2 tsp salt
1/2 tsp baking powder

When dough is smooth and thick spoon it into a colander. Place the colander over the gently boiling water and press the batter through the holes with a large spoon. I had a colander with very small holes so I used a large spoon with nearly pencil sized holes in it. Cook for about one minute, it will float for a minute before its done. With a slotted spoon scoop out the Spaetzle and drain on a paper towel. When all the spaetzle was cooked and drained I added my favorite cheese sauce, heating it first and folding it into the dumplings. YUMMY-even my 4 and 7 yr olds thought so.

Thanks for posting the recipe for spaetzle. I love spaetzle with butter and parmesan cheese or mushrooms. I might have to give it a try this weekend.

I forgot to list the xanthan gum in the recipe. It makes a huge difference in the thickness!!! Please add 1/4 tsp xanthan to the above recipe.
