1 lb ground beef
1 med. potato, cooked and mashed
1 small minced onion
1 egg
Portabella mushrooms, sliced (you can use any mushroom)
garlic to taste
salt and pepper
Combine all but mushrooms. Press into small loaf pan. Press mushrooms into top. Bake 350* for about 1 hour.
***I double or even triple this for a family of seven. But, my family LOVES it and my husband always says now that I make a pretty mean meatloaf. He never said that when I was using other recipes that weren't GF! And it is really great reheated!

Sounds good, never thought of adding mashed potatoes. I will try it. Is the potatoes your own thing?

I saw a recipe that called for grated raw potatoes and didn't like it as much. I like the potatoes cooked better. When I made the meatloaf with the grated raw potaoes they felt a bit slimy in the finished product.
By the way, the recipe called for 1 tsp of salt to a pound of meat, but I think it is too much!

OK, I have the meatloaf in the crockpot -- I formed it into a lump in the middle, and put carrots around it, then potatoes on top of those. We'll see how it works (this is my first meatloaf ever).

I love meatloaf. I make a couple different kinds. One that my kids love is what I call a mexican meatloaf. I take organic, low fat ground beef or turkey,just add brown rice, (pre-cooked or uncooked if you use the quick cooking kind), some salsa that you like and egg and garlic, chili and onion powder, salt and pepper or you could use a GF seasoning like McCormicks Tex/Mex and grated cheese. I mix that all up, put it in a glass bread loaf pan top it with some more salsa and cheese, cover it and bake at 350 degrees until it is done. My kids top it with sour cream and olives and often they put it on baked potatoes or in a tortilla. As you can tell I kind of just throw stuff in, I don't typically use messurements. My daughter recently married and is wanting me to make her a recipe book for her of our families favorite recipes so I am now having to go back and try to recreate them using measuring cups and spoons!  _________________ Connie

Has anyone used GF cornflakes in their meatloaf? I want to make the kind with katchup, will the potatoe taste ok in that kind? Wanting to make it for diner. _________________ Sarah |

I made the meatloaf with GF cornflakes. It turned out pretty good and I didn't even use an egg. I filled a bowl with some cornflakes, smashed them and put some milk in to soften them, then added it to the meat, onion, seasoning and then I put ketchup on top when it is almost done. I didn't have an egg, otherwise I would have used one. _________________ Sarah |
