Hey everybody! Before starting this diet I always made these fat free cupcakes. I enjoyed bringing them to work and telling everybody they're fat free after they complained about indulging. Anywho, since I'm sure the original recipe has wheat, I was wondering if there's a good GF substitute? Here's the recipe:
1 box cake mix (whatever brand and flavor you want)
1 20 oz. bottle of soda (make sure it's regular, or diet made with Splenda)
Blend both ingredients in a bowl until very light and fluffy, almost like frosting or heavy whipped cream. (Add more soda if necessary...I usually end up using 3/4 of the bottle.) Bake and cool according to the box directions.
Make sure you pair up the soda and mix appropriately; don't use a dark soda with vanilla mix, etc. I love this recipe! It's about as easy as making a bowl of cereal, and they turn out soooo good! |

There are several good GF cake mixes out there. Namaste and Bobs Red Mill are our favorites at my house. I don't know if your recipe would work or not, since GF baking often requires extra ingredients to make it works. Some examples are lemon juice, vinegar, extra eggs, etc. The batter also my look a little different than you are used to. GF bread batter is like cake batter, and the Namaste cake often looks pretty watery before it cooks.
I personally would get a GF cake mix and make it according to the ingredients on the package the first time, and then get creative with your recipe the next time you try. That way you can get a little familiar with the way they look/behave.

| Good idea, I might have to try experimenting. I didn't believe my eyes when I first saw the recipe.....how on earth do you make cake without eggs, oil, etc? But it works, and I think they taste alot better than substituting applesauce. |

Wow! It is amazing that it needs only some soda.

I just took them out of the oven.
AWSOME !!!!
I used a bag of GFP spice cake 14oz and only 8 oz of Sprite
It made 10 cup-cakes. I guess it could be 12
Baking time was kind of long (350 F 25-28 min )
One more time .
