Has anyone tried making cheesecake the GF way? I am looking for a proven recipe. I saw a bag of crushed hazelnuts at the health food store and got to thinking that might be a tasty cheesecake crust, but I have no idea how to make any of it.  _________________ Connie

| I always make a no-bake cheesecake, and it turns out the only thing I needed to change was the graham cracker crust. I made the ones in the Bette Hagman GFG Bakes Bread cookbook. It turned out pretty good, and next time it will be excellent, because I will use LESS cinnamon than the recipe says to. |

Kinicknick (SP?) sells gluten-free 'graham cracker' crumbs. In the saltine cracker thread there is a recipe for graham crackers that Peg made last night. Al raved about them.

The Knk graham crackers are good. 3.00-4.00 per small bag.
Funny story about KnK graham crackers. Peg was making Buckeyes (or as we call them Peanut butter balls) for Christmas. I placed an order with Gluten Free Trading Company in Milwaukee. They were out, they wouldn't get them in time (of course I probably waited a bit to long before I ordered them). So, I knew a health food store in a town 45min away had them. So I asked if they could get them out UPS so I'd have them. I think the owner was a bit put out that I asked that, but the customers always right, right? So, I got them the next day in time for the cookie baking (UPS ground will arrive next day w/o problem). I opened it the package, there were 2 packs just like I ordered...but those 2 packs cost me 18.00 It was about 10.00 for shipping. That'll teach me!! We have UPS shipping at the shop here so I know 10.00 was pricey (residential adds to the price), but she had to take them to a place to have them shipped, that adds to the cost, cuz that shipper place tacks on some.
Needless to say...i did not share any of them with any one else!!!

Maybe I could get Peg to make me a Keylime pie with those fresh crumbs...I wonder if we have the fixin's for that??? _________________ Al

| I have made cheesecake with G/F gram crakers my kids loved it. They asked me to make more. they also love the brownies. HAHAHA they like all my G/F snacks. |

Would anyone else like to share their recipes? Although, with this new weight controll thing starting soon, maybe I should be looking for low calorie, gluten free cheesecake recipes....if there is such a thing?  _________________ Connie

Hi!
I use Mi-del chocolate snaps or ginger snaps for crust. They are awsome.
I am using low fat cream cheese and cut butter for crust in half.
It will always cut few calories out (since I can't cut sweets , love them too much !!!! )

I've been making cheesecake since I was 10. I never wanted cake for my birthday (hum? wonder why?!) Anywhoo... my mom never really liked to cook so I learned how to make the two layer cake because I liked to eat it. Needless to say when I was diagnosed (at 30) I couldn't bare to give up my beloved birthday (and holiday) cheesecake. So in despiration I bought a bag of GF vanilla animal cookies and "crumbed" them. Once they were crumbs I added cinnamon, a wee bit of nutmeg, brown sugar and almond slivers. It's not the same as a graham cracker, but it is good.
I'll have to order the Kinnikinnick g.c. ahead of time and give it a whirl... sounds lovely, closer to the "real" thing...
