I apologize that it has taken so long for us to get back in contact with
you. I have worked with several members of Celiac-Sprue foundation on
Leavenworth Street and have developed a strong interest in assisting
those with gluten intolerances in finding a quality and safe meal. At
our restaurant we have many options available, and we generally try to
handle these situations on an individual basis so we can best meet our
guests' needs and preferences. Some of the options I often choose
include making our tomato basil soup from scratch or preparing the soy
glazed tilapia with soba noodles instead of the rice noodles. However,
when you visit our restaurant I would prefer that you ask for me so that
I can personally work something out that you will enjoy and that I can
assure will be safe. If I am not in the restaurant when you visit any
of my other sous chefs should be able to accommodate you. I can be
reached here at the Legacy restaurant. I am normally here
all day Tuesday thru Saturday and most Sunday mornings.
If you have any questions please feel free to call. I look forward to serving
you in the future.

Sounds like he is willing to work with you. Do be careful of soba noodles, though. Most of them combine buckwheat and wheat. I have only found one brand that was buckwheat alone. Just something to double check before you order. Double check the soy sauce for wheat, too. He will probably know this, but you never know.

I have never been able to find soba that doesn't have wheat in it. What is the brand that have just buckwheat?

I'll have to look again the next time I go the Asian grocery. I will post the brand when I find it.

I'm just happy he's willing to work with me! Most of the emails I got back were snobby or a typical autoresponse.
