According to Nutrition Review, vol 62, no. 9 Sept 2004 p 360-363, 6 % of foods that are supposed to be gluten-free on the basis of labeled indications contain more than 300 mg gliadin/kg product. The study goes on to discuss the case of a patient with CD who had minimal daily dose of gluten, had improved clinical symptoms and negative serological markers, but on biopsy showed lack of mucosal recovery (this is what causes complications such as lymphoma).
If we can't trust the labels, should serious gf patients stay away from packaged foods altogether? _________________ Barb:) |
