I decided to experiment in the kitchen tonight and came up with a fun easy GF recipe!
cook up 1lb rice pasta (I use Tinkyada brown rice spirals)
In a frying pan melt 1 stick GF butter (land o lakes margerine)
to that add 2 TBS minced garlic (more or less to taste)
to that I added 2 yellow bell peppers sliced
a package of thawed snap peas
and a package of thawed broccoli
Cook veggies through stirring to coat in butter
After the veggies are cooked I put in about 2oz of sulfite free savingiogn blanc (spelling) and let it cook for about 5 more mins for the alcohol to burn off
Then pour over the pasta and mix together
For other varriations you can add chicken before the veggies if you do cook the chicken so it is white on both sides before adding veggies, also if desired add carrots
It comes out similar to a scampi, I may try this with shrimp next week! |
