My favourite lasagna recipe

9 pieces lasagna noodles (Tinkyada)
32oz Ricotta Cheese
8-16oz Mozzarella (recipe calls for 8, but I prefer more)
1/2 cup Parmesan cheese
1 lage jar sauce (Seeds of Change brand roasted Garlic flavour)

Preheat oven to 350
Cook noodles as indicated on the box (I HIGHLY reccomend using the Tinkyada noodles, I have used the DeBoles no-cook noodles in this and was VERY dissapointed!)
While noodles are cooking mix the cheeses together reserve about 4-6oz of Mozzarella
Rinse noodles
On the bottom of a glass 9x13 baking dish coat the bottom with sauce then a layer of 3 noodles followed by a layer of the cheese mixture (half of the mixture). Followed by another layer of noodles, then sauce, cheese, noodles. Cover the top layer of noodles with sauce. Cook at 350 for 25-35 minutes until sauce starts to bubble around the edges. Top with reserved mozzarella cheese and cook for 5 more minutes.

For other variations I have grilled up some hamburg and mixed it in to the sauce. On a seperate occasion I added some frozen spinach (thawed) to the cheese mixture.

This freezes VERY well!

Ooooo yummy! That sounds really good! Very Happy I can't remember the last time I had lasagna, but I know I used to love it and I really miss it. I've been meaning to make some lately, and now I have no excuse not to! Thanks Kristi!!! Cool

You are so welcome! I make it once every 2 weeks. Eat half and freeze the other half in individual portions for "frozen dinners" I have fed it to non GF guests who never knew the difference!
