Okay, maybe I'm being a little dramatic but you really, really should try them. Most are GF (rice and/or tapioca flour) but some have wheat so do check the label. just put both sides under running water, set on a cutting board, put filling in the middle, and roll them up. If you are going to use them as a burrito shell replacement (the soft texture begs me to try this, but haven't bought refried beans lately) I would suggest doubling up (with the folded part on different sides so there's not a huge one sided wad of wrapper if that makes any sense).
Last night I made some salmon with chinese parsley, green onion, tomato, and white wine. I mixed the extra with rice, put it in a spring roll wrapper and had it for lunch (great way to recycle leftovers). Between spring rolls and nori I can have something protein/carb to bring with me everyday along with an apple or other fruit for lunch. Much better than my crumbly attempts at GF bread and lower calorie too. _________________ Lauren

do you fry them or what? How do you prepare them? Is there any cooking involved?

I just rehydrate. No cooking, and after you wet it then you can fold it up in a minute (they are dehydrated so they can be stored in the cabinet and last pretty much forever). You can fry them if you want to make it more eggroll like, but not required.
They are a little bit fragile when dry. Once I had the water on close to full blast and cracked the middle . Easy problem to avoid. _________________ Lauren

The asian food store. They are very thin and dehydrated, so they are on the shelf. The refridgerated ones usually have gluten, but these are different. _________________ Lauren

We just have a generic asian food store in Chapel Hill. I've seen them there and bought them in Chinatown in Honolulu, but I think they are used for vietnamese cooking. _________________ Lauren

Ditto on that. We've only got 1 Asian food store near us, and it only carries the frozen kind. Which is sad, because I've got a few awesome recipes for them. _________________ Ostrich :>--O==={

Are spring roll wrappers the same as rice paper?
I have a package of rice paper in my kitchen... I'm still trying to figure out exactly what to do with it. =)

I was talking about summer roll wrappers (oops!) and they are the same as rice paper. You just wet both sides under running water and they get nice and soft. I like them for sandwich wraps, burritos (double wrapped), and making leftovers "new" again.
I need to buy some salad shrimp and make shrimp, lettuce, and bean sprout wraps to dip in honey dijon dressing. Oooh, that sounds so good . _________________ Lauren

Oh... ok! So, technically.... I can wet them down and fill with stuff I would normally make sandwiches with, or rice&veggies and such. It really would be nice to be able to take something to work for dinner that doesn't crumble all over my desk!!
I only work two nights a week, but I usually just have a waffle or something once I get home. It's so close to bedtime, and I really hate eating crumbling bread in my office! |
