After posting the recipe here, I decided to make these for dinner last night.
I think a quarter of a cup of peanut butter is too little. I increased it to 1/4 cup plus 2 tablespoons and it seemed pretty right on.

Since ramen isn't gluten free I wouldn't use those, but some gluten free noodles about the same size would be perfect. I prefer to make it using angel hair when I can find it. I like the texture of the gluten free pasta(Italian) better than Asian rice noodles in this dish, but rice noodles would be fine if you like that texture.
