We're planning on hanging out with some friends this weekend and making smores. Anybody have some good reccomendations for GF ghram crackers?
Maybe I'll just skip the crackers and go directly to the marshmallows and chocolate....mmmmm, sugar....... _________________ Ostrich :>--O==={

I haven't seen a GF ghram cracker, but me personally.... I would sub with Ener G crackers. I would maybe even use my Marargine (very light coating) and a cinnamon/sugar mix on top to give them a bit more flavor. hmmm, yeah.. I think that would work just fine (for this not so picky lady who is now craving smores!) LOL _________________ Kristie M.

Health Valley Rice Bran crackers are a reasonable substitute, or you could make your own.

I agree--the Health Valley Rice Bran "crackers" are pretty good and more like an "adult" cookie than a cracker. They've got just a touch of sweetness and I think they would be good with S'mores...
I know that Josef's Gluten Free Bakery also makes some "graham crackers," but they didn't look like the graham crackers we all know and used to love...has anyone else tried these?? _________________ ~Torrey

I thought I posted this before I left home...evidently not!!
Carolyn posted this awhile back. This is what Peg used. They are really good!! Even another celiac liked 'em. Works great in GF Cheesecake!! I was disappointed when Peg had them all smashed up already. Luckily she had some larger chunks left YUM!!

1 tsp. xanthan gum
1 1/2 tsp. salt

Cornstarch for rolling- as needed
Four Flour Bean Mix:
2 c. garfava bean flour (2/3 part)- I use garbanzo bean flour only
1 c. sorghum flour (1/3 part)
3 c. cornstarch (1 part)
3 c. tapioca flour (1 part)
Whisk flour mix, xanthan gum, salt, cinnamon and baking powder and set it aside. In a large mixing bowl,k mix the margarine, honey, brown sugar, and vanilla. Add dry ingredients alternately with the water,using just enough to hold the batter in a ball that handles easily. Let it sit in the refrigerator for 1 hour.
Preheat oven to 325 degrees. Lightly grease 2 12x15 cookie sheets.
Using half the dough, (working in a little cornstarch if necessary). Roll out the dough on waxed paper into a rectangle. Transfer to a cookie sheet. Continue to roll it out until it cover the entire cookie sheet and is abou 1/4 inch thick. Cut the pastry into 3 inch squares and prick each square 5 times with a fork. Bake for about 30 minutes. Remove the crackers on the edge if they get too brown. Put other half of the dough on a cookie sheet and bake it in the same way.
I found that right after I took the pan of crackers out of the oven that the "cutting" marks were gone and I had to cut them again (I used a pizza cutter). Do that RIGHT AWAY when they come out of the oven. Otherwise they will get too hard to do that easily. Let them cool on the pan for a few minutes then remove them and let them cool completely. Mine turned out real crunchy, not soft like regular graham crackers but they have a wonderful taste to me. I haven't tried it yet, but I bet they would be good with peanut butter on them. Could also crunch them up and use them for the top of a "streusel" kind of cobbler or coffee cake. Praying that you enjoy these as much as I am. Blessings!!!

oh yummmm!! I will have to try this one! I wonder if guar gum and potato starch woould work in place of xanthan gum and corn starch.

You should be able to easily sub the xanthan for the guar gum. I think the potato starch would be just fine for the corn starch. I would suggest you make up 1/2 or 1/3 of a batch of the flour mix until you've 'tested' it.

Ya I recently tried the Health valley rice bran crackers for the first time and enjoyed them too . I would like to make Pegs receipe for bigger crackers though.
