This is how DH and I make chicken fried rice. It's much healthier and safer than ordering out! The key to this recipe is having all your ingredients ready to go. Once you start cooking this thing goes fast! You'll need:

A wok. This is very, very handy, you can use it for all sorts of stuff. If you don't have a wok use the biggest, widest skillet you own.

1 package Sun Bird Fried Rice seasoning
1 lb chicken breasts
2 Tbs veg. oil
3 c. cooked rice (just make it like it says on the back of the Uncle Ben's box)
2 tsp GF soy sauce
2 eggs, beaten
1 c. frozen peas and carrots, thawed
3 green onions, sliced (optional)
1/4 c. sesame oil (optional)
onion powder to taste (optional)
garlic powder to taste (optional)

Chop up the chicken to whatever size you want. Stick in a zip-top bag with the sesame oil and marinate for a few hours. Remove from the bag and cook until done in a pan. Set aside.

Put the veg. oil in the wok. Set the wok on the stove and set on Medium to Medium-Low. Once the oil is hot add the rice and green onions. Mix until green onions are cooked, then add the soy sauce, seasoning packet and the rest of the seasonings. Stir fry all that (flip and stir) for 1 minute. Push everything to the side (leaving as much of the bottom of the wok open as possible) then add the eggs. Scramble them into the rice. Add the veggies and meat, heat the whole thing up, then serve! Serves 2 people for several days. Wink
