lots of fresh celantro
cucumbers
sweet onion
any other veggies you like
seasoned rice vinegar(don't bother with unseasoned-I did yuck) mixed with equal parts suger or sugar substitute. I use splenda or stevia. You can also mix to taste as some sweetners are sweeter then others.
If you never had stevia here is an explanation: http://www.stevia.net/
You can find it at most coops and larger grocery stores. It is more expensive then artifical sweetners, but likely safer as it is natural and not linked to cancer.
Put all chopped veggies in bowl top with mixed seasoned rice vinegar and suger or suger substitute. Cover and put in fridge to cool and season a bit.
Then enjoy
