Last night for dinner I made fried fish...yummm...I hadn't had it in a looooooong time. I took my filets, coated them w/ egg, then coated them w/ cornmeal/seasoning mix (something I made up if you want the recipe let me know). Then I fried them in canola oil in a frying pan. It turned out very good. Well I had 2 fillets left over today and my husband won't eat re-heated fish. So I decided to get creative. I took a kinickinick hot dog bun & put a fillet on it w/ cheese & mayo. Yum! It was very good. I had chips & watermellon with it. It made a great lunch for leftovers! Just wanted to share that Very Happy

Hi DotK,

Please share your recipe. Thank you! Yours sounds like the breaded fish I miss! We eat fish alot. In the summer we put filets, margarine, and a little seasoning (Mrs. Dash or lemon pepper seasoning) in a foil packet and grill it.

I can't have eggs. Maybe plain yogurt would help the cornmeal stick?

For 4 fish fillets (about 4 oz each) use the following recipe:

1/3 cup cornmeal (we used fine ground)
1 Tbsp. Old Bay Seasoning
1 tsp. parsley flakes
1/4 tsp. garlic salt
1 egg, beaten (or anything moist to help the dry stuff stick to the fish)
3 Tbsp. canola oil (to fry the fish in)

Place cornmeal on large piece of wax paper. Add seasonings. Stir w/ a fork until well mixed. Dip fish fillets, 1 at a time into egg. Allow excess to drip off. Coat w/ cornmeal mix. Heat oil in large skillet. Panfry fillets 5-6 mins. on each side or until fish flakes easily w/ fork. Enjoy! Very Happy
