| That would be so wonderful. I know of a local place here in Olympia that has cooking classes on every topic imaginable that are open to the public for a reasonable fee. I have yet to see a GF class, but . . . it is small and personable and wonder if the owner would like a challenge? I think I will contact them this coming week and see what they say. Howdy, I baked some really good GF cookies last nite (with quinoa flakes). About an hour after eating them, I started to not feel so good. I began itching....mostly around my neck and upper chest, a little epigastric discomfort with mild nausea & some indigestion with lotz of belching. By the time I went to bed I was feeling 'some' better.
Well, this morning I woke up at 5:20 & had to run to the bathroom.....what a blow out ! ! ! Diarrhea, foamy, floaty & smelly All I can think of is 'cross-contamination'. Stupidly (I'm new at this diet, 3 weeks) when transferring the cookies from cookie sheet to 'already wheat contaminated cutting board'......"IT" occurred
I didn't even consider this last nite ! ! Then I remembered that I had 2 cookies by Pamelas'.....mistakenly I bought the chocolate chip/oatmeal. I figured I'd try them anyway, just to test 'me & oatmeal'. Hours went by without any symptoms. Until late last nite after eating the cookies I made.
I used real butter....could it be the dairy? I used pecans & walnuts....could it be the nuts? I used peanut butter....could it be peanuts? I am so dissappointed. I felt SO good yesterday. And then the cookies.....just thinking about them makes me sick to my stomach.
I feel like the past three weeks of being gluten free & 'almost' dairy free have been all for naught I know it's a learing experience & I have learned some....but, I still have so many 'unknowns'. And to beat it all, I mentioned 'cross-contamination' to my husband......& of course, he didn't buy it, how heart-breaking.....he just doesn't understand how serious this illness is. I think he took it personally, he said...."I wipe down the cutting board!"
I love butter, I love nuts..all kinds, I love cheese..all kinds. I'm lucky in one respect...I was never a really big bread eater.
So now, I'm going to have to stay strictly GF, dairy-free, nuts-free (sounds funny) for a while aren't I.....? But then, I'll have to introduce them at some later time, one at a time & wait . . . .

Sorry to hear about that
It takes awhile to really get a handle on this diet. It took me a couple of months before I was really comfortable with my food choices!! Probably 1 year before I felt fully engrained in it. So, just starting out, you will make mistakes, find things you didn't think of or realize. It's all part of the learning process. It just takes time to acquire the knowledge and the expertise.
Yes, you could have other food issues. You might try keeping a food diary. Dealing with delayed onset food issues can be frustrating. Reactions can occur 1 or 2 days after eating something...so it can be difficult to really tell. You might try keeping a food diary. Write down everything you eat. At least that way you can look for patterns. You can strip your diet back to the very basics for awhile and see how it goes. Then as you feel better slowl add items back in.
Hang in there!! Don't give up!! And yes cross contamination IS REAL!! Getting NGF people to understand the intricate details of this is difficult. Unfortunately, family members are the hardest to convince!! _________________ Al

I always get sick from Pamela's cookies - so I never eat them anymore.
I think you probably had a combination problem from her cookies, the oatmeal in her cookies & the wheat you picked up from the contaminated cutting board. Plus, in my opinion it is probably too soon after GF to be eating quinoa flakes - your system just cannot handle those grains yet - but you can decide that for yourself - that is just my experience.
Did you use parchment paper on your cookie sheets? Unless they were new I would use the parchment paper. I threw out all my old cookie sheets because they were all groady looking with bits of brown stuff on them - especially the edges etc.
For something sweet you might keep some Hershey chocolate bars on hand, the regular sized ones, plain or with almonds. |

Thanx Jeannine 1, I didn't realize that I should stay away from quinoa for a while.....any idea how long? Why, is it too much fiber? Frankly, Scarlet, that would tickle me to death.....that it was just the quinoa
I'll also stay away from Pamelas' cookies....probably indefinately ! Oatmeal or no oatmeal.
Nope, didn't use parchment paper....I plead ignorance But, surely will in the future....if I ever bake cookies again !
Luv your suggestion about Hersheys'.....my fave. I'm going out to the grocery store this afternoon, will gladly buy many....I may need to hide them.
