I made this last night and it was GOOD! Had leftovers for lunch, so did my husband, who emailed me to say the pizza was (and I quote) "Dy-no-mite!"

It's easier than it looks (I was thinking "too many details...")

It's from Living Without magazine.

I made it with the brown rice flour, sweet rice flour for the dry milk, and I used 3 tsp of xanthan gum rather than two and 1 tsp of gelatin because I didn't have any gelatin and it was fine. Also, I made it by mixing all the dry stuff (minus the yeast, which I threw in the warm water and sugar mix to proof it) in my small Cuisinart then adding the wet and whirring it for about 30 secs to a min. The sweet rice flour dusted on the top of the dough was key to getting it to flatten out (super sticky!) and I baked it on a silicone mat on a cookie sheet. Reading all the directions is good but made me feel like it was going to be too tricky (as most gf breads/etc seem to be to me) but this one worked like a charm...

Pizza Crust
From Living Without magazine

This crispy pizza crust tastes so delicious that your family and guests will never guess that it's wheat- and gluten-free. You can hold a slice in your hand, and it won't crumble! Make one large pizza, or shape the dough into four individual pizzas.

1 T gluten-free dry yeast
2/3 cup brown rice flour or bean flour
1/2 cup tapioca flour
2 T dry milk powder or non-dairy milk powder or sweet rice flour
2 tsp xanthan gum
1/2 tsp salt
1 tsp unflavored gelatin powder
1 tsp Italian herb seasoning
2/3 cup warm water (105 degrees)
1/2 tsp sugar or 1/4 tsp honey
1 tsp olive oil
1 tsp cider vinegar or 1/4 tsp unbuffered vitamin C crystals
cooking spray

Preheat oven to 425 degrees.
In medium mixer bowl using regular beaters (not dough hooks), blend the yeast, flours, dry milk powder, xanthan gum, salt, gelatin powder, and Italian herb seasoning on low speed. Add warm water, sugar (or honey), olive oil, and vinegar. Beat on high speed for 3 minutes. (If the mixer bounces around the bowl, the dough is too stiff. Add water, if necessary, one tablespoon at a time, until dough does not resist beaters.) The dough will resemble soft bread dough. (You may also mix it in a bread machine on dough setting.) Put mixture into 12-inch pizza pan or on baking sheet (for thin, crispy crust), 11 x 7-inch pan (for deep dish version) that has been coated with cooking spray. Liberally sprinkle rice flour onto dough, then press dough into pan, continuing to sprinkle dough with flour to prevent sticking to your hands. Make edges slightly higher to contain toppings.

Bake the pizza crust for 10 minutes. Remove from oven. Spread pizza crust with sauce and toppings. Bake for another 20-25 minutes or until top is nicely browned. Preparation time: 45 minutes. Serves 6.

It looks really good! Next time post a picture of it before it disappears!! LOL

We've had real good luck with Chebe Pizza mix. Peg orders a delivery pizza and says..."I don't know why I keep doing this...the stuff we make is sooo much better than this" Smile There is one problem with the chebe...there's no left overs Sad I love leftover pizza!!

I'm thinking it would be really tasty as other things, too. Like pastry of some sort (cinnamon and sugar all over, spoon jam on it, etc) - it is kind of light and had a sort of flaky quality.

The only reason we had leftovers is because I made it (my husband had band practice - good time to experiment in the kitchen) and so I ate 3 of the 8 pieces, he had one when he got back, and we each took two to work today. I may need to make another tonight.

Ahhhh. Well, it takes one to know one. I'm *such* a food fetishist that this weekend I am driving 3 hours (round trip) to make a Trader Joes/Whole Foods excursion. Yep, that's dedication...

OK, the band is called Tequila Mockingbird (heh-heh, too much reading of Tom Robbins) and they play covers of 70's and 80's rock and roll (Neil Young, Led Zepplin, Billy Joel, The Ramones, and they brought the house down doing "Rocky Raccoon"/Beatles when I saw them last - everyone in the bar singing along). They play every other Friday usually at this kind of dive bar (have a dedicated fan base) but tonight they are playing at a benefit. And I'm sitting here at my computer writing about it instead of being there. Wink

Carey is a drummer and has played drums in bar bands for 30 years (yeah, that's right, if you do the math, since I was 3... Wink) I have to say I didn't really "get it" before because most people I know who have been in bands did that because they just needed a hobby or thought it sounded cool or something. But when Carey plays drums it's like something amazing happens, like he transcends everything else in the real world and that is I think the best reason to do anything. I'm not much of a bar scene person anymore though so I often don't go which he understands. And that's why I'm at home on a Friday night cruising the Internet before I hit the sack, enjoying a nice evening by myself.

Anyway, hoping to get a good night's sleep as I have not been doing that this week for some reason. Also having a bad stomach night (another reason I'm at home) and am trying to figure out what I did this time. Confused I'm so worried my test results will come back and say no more dairy that I think I'm beginning to imagine problems with it! Or maybe it's that new supplement I started recently.

Have a nice evening and maybe I'll check in over the weekend - for sure if I get my results.

I was surfin' and came across this band in Texas...Are they one in the same? Kool.


......Tequila Mockingbird was born in 1994 in a laundry room in Buda, Texas. We now make music in a 6,200 sq. ft. studio in downtown Austin.

The founding partners are Wally Williams and Danny Levin--an ad guy and a music guy. Jus curious....I will try out the pizza recipes...Jim

Wow, close, but no cigar. Interesting, though, some members are from Texas. But the band is in Northern Cal. And, disbanded at this point. But they may reemerge in some other incarnation at some point.

To make this relevant to pizza - I haven't been making from scratch recently but buying several gf crusts at a time from Whole Foods Bake House. Pretty dang good. AND, amazingly enough, no potato or corn ingredients! Woo-hoo! How difficult to find gf/corn free/potato free? Really difficult! And still taste good? Ahhh, maybe I'll have one for dinner...

I'm doing well. Changed jobs about 5 months back and now I'm launching into my own business. I'm excited about it! It's been a lot of work so far but things are going well so far.
