Since turkey is an iffy product in the best of times, due to our corn problems, we decided not to chance the ground turkey.
I missed sausage so much, that I got the wild idea to make Chicken Sausage. I figured if you can make Turkey sausage, then chicken is very similar. LOL
We made this today and they are pretty good. I used ground chicken breast. It might be a little different if you were to use ground dark meat.
Chicken Sausage
1 pound ground chicken breast
1/2 tsp sage
1/4 tsp Mrs.Dash garlic herb
1/4 tsp sea salt
Dash of hot red pepper flakes
2 dashes of black pepper
Mix well and shape into patties. Put a little olive oil in the frying pan to keep the patties from sticking. _________________
