I was dx last summer, and was so happy to know what was going on. Went GF and felt so much better! But still got slammed now and then, as I learned what was OK, and what not. Now, for the past two or three months, I have been going down hill again. Not cheating!!! Just always constipated and gut hurts morning to night to next sunup.... So I am searching for other intollerances.
Could it be dairy, which I always thought was my only problem? Lactose Intollerant since HS, never knew about Celiac then. Last summer thought : OMG, it's not the milk, it's the cookies!!! Started having milk again and it seemed OK. BUT... now I am thinking, maybe still no dairy? Maybe peanuts? eggs? apples? chocolate? All things I am reading others are intollerant to. I am trying to cut out all those things, but I crave dairy so much I can't keep away from it! Not to mention chocolate....
And I am so darn hungry all day. What protein can I snack on during work? Not gnawing on a hunk of steak..... I was eating nuts, hard boiled eggs, cheese, etc. to keep up my energy, and now trying to cut it all out. What do I eat? I love rice but it doesn't fill me up! Fruit too, and carrots only go so far....
I was baking all GF stuff, bought the cookbooks, etc. But it gets so expensive! And how do I do that without eggs and dairy? Beans, of course. But they give me gas! Boo Hoo
Sorry to ramble on and on in my first post. I am so lost and so hungry! Poor me. |

Hi Clouds,
Welcome to the board!
Hmmmm it could be the dairy. It is very common in the Celiac community to be LI. Some people can tolerate dairy once the stomach is healed (The very tips of the villi produce lactase - that's what breaks down the lactose - a sugar - in milk).
It could also be casein. Casein is the protein found in cow milk. Let's see, some cheeses are low in lactose...I think it's the hard cheeses. Some people can do cheese and not milk because of the lactose/casein thing.
One thing you could do is keep a food diary. Log EVERYTHING you eat. It might be possible to spot a patern. Or elminate groups of foods for awhile and see how you feel. I might start with the milk.
I've been experimenting with dairy for several months now. I am not dairy free - just greatly reduced.
Hmmm I'll have to think about snack foods.... _________________ Al

and watch out if ppl in ur house use ur mayo or butter etc., i found out i had to keep them separate, or have my own to use, or i would react for sure.

Yep. I had that problem too. I went GF and things were great and improving like crazy, then all of the sudden I started to have a few problems that were creeping back in. I checked everything I was eating and couldn't find a problem, and then one day as I stuck my knife into the butter bowl, I saw what looked like a bread crumb and thought "ah HAH!!! That MUST be it!" So I got my own butter bowl and made it clear that no one else was to use it and guess what ... the problems went away again.
Clouds:
Beware of ANYTHING your food comes in contact with that is shared with other food. Condiments, toasters, shared silverware, ... anything. Your body can become more sensitive to gluten over time (and often does), so it could be that you've been getting just a teeny bit of contamination or something all along and you're just now becoming sensitive enough to react. With that said, you are certainly on the right track to not rule out other intolerances. You may have seen on this board how common other intolerances are, so definately keep investigating those as well until you find your answer.
As far as snacks go ... our neighborhood fireman from Maine up there has some good ideas. Peanut butter tends to be pretty filling for most. I find myself knawing on a block of cheese a lot of the time, and I'm constantly pulling out that bag of deli meat to snack on. This one's gonna sound weird, but I absolutely love the Gerber Graduates turkey sticks. They are exactly the same thing as Vienna Sausages except that you actually know what's in them and that it won't kill you. Don't let the thought of "eww baby food" throw you off. They are really good and convenient to take with you to snack on because they don't need refridgeration (unless you don't eat them all at once - then you should) or anything. As far as what is the most satisfying, I think that varies with the individual ... so you may just have to experiement. You know yourself better than we do! So just mess around with it and hopefully you'll find something that works.
Good luck! _________________ Sarah

http://www.medicinenet.com/hydrogen_breath_test/article.htm
I'm going to get this test done next week. It's only offered at the Children's Hospital in our metro town. _________________ Thanks be to God for His indescribable gift! 1 Co 9.15 |

I'm certain it is; I can't imagine why anyone would sell raw meat for babies to eat right out of the jar! That would be ick! It's really really good, and also a good source of protein and iron (or at least the kind I eat is - Gerber graduates).
Chocolate rice cakes?!?!?! Holy crap! Where on earth do you find those?!?!?! What brand??? Wow ... I would be in heaven! _________________ Sarah

Yea so I am more or less new to all this gluten free diet however i picked up a medical book that has info in it about Celiac Disease and it says that their is 2 kinda of gluten and hiden gluten and that hiden gluten is in peanut butter, coco which is what is in chocolate, ketsup, mustard, tomato sauce, and canned soups. I believe that is it accurate but i have such horrible cravings for chocolate. Just thaught I would share my knowledge |

Hi,
I just learned at a GF living presentation last night that it's really common for people to feel great right away when they go GF, and then hit a wall around three months when they feel much, much worse.
Danna Korn said it's because the toxins are being flushed from your system, and also might be because gluten is indeed sneaking in somewhere.
If you've checked everything, and still no chance of gluten, just hang in there! She said it will indeed get better.
Here's hoping,
Tammi |

Hi Christi,
Yup - gluten can be found everywhere! Luckily it's not in ALL versions of the above. You just have to find the ones that are GF. Take a look in Proper Foods - there are several lists of GF foods. I think you'll be able to find some GF chocolate to quiet those cravings _________________ Al

As far as what to eat at work...I eat baked potatoes (just take them wrapped in foil, already baked) with chicken and my own butter. I pack the butter and chicken separately and then put them all together and zap them in the microwave. I also like bananas and peanut butter.

For those of you who need high protein, casein/lactose free food that is "portable," our family really likes Shelton's Turkey Jerky. It comes in regular and hot. We buy 0.5 oz, individual serving size bags. We've eaten it on the golf course, on the ski slopes (with an apples and some almonds), in the car, and at work (usually with a baked potato).
Their number is 1-800-541-1833, or www.sheltons.com.
We carry around Shelton's Turkey Jerky, little boxes of raisins, other dried fruit, bags of sundried tomatoes, nuts, gum, gf meal replacement bars, gf tea bags, and fresh fruit. And a little gf candy, of course (Mike & Ikes single serving bags are easy). Sometimes we take Thai Kitchen Peanut Noodle Carts with us, too. Keeps us from getting desperate!
Hope this helps! |

Thanks for all the ideas. I have decided it must be the dairy, and have gone back to taking the lactaid caps with cheese and ice cream, and drinking the lactaid milk (generic, but still...) with Carnation for breakfast. It has made a big difference. I also think the eggs make me constipated if I eat a whole egg. It doesn't seem to bother me that much if it is included as an ingredient in baking, but I can't handle the whole thing as a breakfast. Sometimes my grocery store doens't have any of the Nabisco hot rice cereal, so I have a hard time finding good breakfast options.
Nuts have been giving me gas, so I don't eat peanuts or peanut butter much anymore. I did start to buy Ensure protien drink, which is lactose-free, and it is a good mid-morning snack. Doesn't taste great, however. Apples and bananas bother my stomach, but I can take a small amount once in a while.

Glad to hear that! That is very encouraging! |
