Ingredients:

1 beaten egg
3/4 cup V-8 juice, or gf tomato soup
1/4 cup long grain rice, uncooked
1/4 tsp onion powder OR 1/4 cup finely crushed onion
1/4 tsp pepper
1lb lean ground beef or turkey
1 tsp GF steak sauce
1 tsp dried, crushed oregano

Directions:

In a medium-sized bowl, combine egg, 1/4 cup V-8 juice, uncooked rice, onion powder/or onion, and pepper. Add meat and mix well.

Shape into 20 meatballs. Place in a large skillet.

In a small bowl, mix remaining V-8 juice with the steak sauce, oregano, and 1/2 cup of water. Pour over the meatballs.

Bring mixture to a boil, then reduce heat. Cover and simmer, stirring often for 20 minutes or until center of meat is no longer pink, and rice is tender.

Skim fat, serve with Parmesan cheese if desired.

Those sounds tasty. But, I didn't see any porcupine meat in the recipe Smile

My uncle used to have a roadkill cookbook. He was always threatening to make possom for Christmas dinner.

we used to have a box of Roadkill Helper on our kitchen shelf - just for fun. We used to threaten to make it for the children if they were bad, but they WANTED us to make it! BLECH!!!
