I have been so worried about feeding my picky eating 8 year old daughter (just diagnosed). She has pretty much rejected everything that we got from the health food store and has been living on rice cakes and fruit and shrimp & rice dumplings from Chinatown.

So today we got one of the GF flour mixes and made our favorite banana bread recipe. I held my breath the whole time, hoping that the bananans and eggs and sugar would make it taste enough like what she was used to.

And with a sigh of relief we all tasted it and it is fine. Just as good as the traditional.

Maybe life will return to some semblance of normal...

Of course it is always possible that tomorrow she will change her mind and say it is yucky... but I don't think so.

I'm thinking of Brownies too.... it will be funny if this disease makes me more of a baker than I was before. I guess that's the silver lining.

Oh it will!!

When you see the prices of GF baked goodies...you'll be making them Wink

Peg has always liked to bake, she has enjoyed this challenge of mine. I am thankful she likes to cook and bake!!

There are many silver linings with this, we just have to look harder for them. Just like seeing things labeled GF - that's a joy others will not understand.

Today we are trying pumpkin bread. It smells good and my daughter and I had a lot of fun mixing up all the ingredients ... I sure hope it works out well....

Hi Amy,

I am so glad DD is taking an active roll in making her GF food. This will help soooo much in the long run!!

Let us know how it turns out. GF baking is a bit different than NGF baking. So if something doesn't turn out like you think it should - keep trying!!

I think the reason the banana bread came out so well is that it is a dense bread anyway. I'm hoping pumpkin will be the same. I guess a light and fluffy cake would be hardest.

Pumpkin bread is the only thing with pumpkin in it I eat (yes, DH gets all the pie at Thanksgiving). Let me know how it goes, I may have to whip up a batch for myself. Smile
