Okay, we've been doing this diet for awhile now, but school is starting soon, and he's tired of PBJ. We've also just added a severe allergy to eggs to the list of foods to avoid. He can't have dyes, and he can't have dairy (casein).
Any ideas? We havn't been as serious about the gluten as we should have been. I've found out that a couple of things he'd been eating had wheat. So, I'm back to trying to get him on a 100% diet, especially since I suspect he might also have celiac.
I was thinking about tuna, but I think there are mercury concerns there. _________________ Mary (37) GFCF/dye free

Wow, you don't have it easy!
Can he has soy? If so, how about cream cheese (tofutti or something like that>)
You could sub Flax meal for the eggs, so if you bake for your child, that would help for consistancy.
How about a thermos with home made soup?
Rice noodles with spaghetti sauce. (wide mouthed thermos)
Fried rice.
Celery and peanut butter with raisins to dot the creation.
carrot sticks with a vinegrette dressing for dipping
salad.
chicken salad.
Beanie weenies (Hebrew National are GF)
maybe make some pizza rolls with hamburger in it. (I just made cinnamon rolls from a website and I was thinking that the dough could be used for that.......it handled really well. I may have posted it in the recipe section under the title cinnamon rolls. You could use soy cheese.)
I will try to remember to post some recipes that I have for 'cheese and mac. noodles' it is not diary. It is dairy free. (It is a vegan cookbook.) I am in the midst of a wedding for my son this week, so it will be a while before I can post any of the recipes.
How about getting some GF lunch meat (Boar's head) cutting it like the lunchables and putting GF crackers in the box also. _________________

I would try as many "whole food" combos as I could:
Fruit salad
Sliced avocado on rice crackers
Baked potato "fries"
Apples and rice cheese or peanut butter
Rice noodles with olive oil and chopped tomatoes
mashed sweet potatoes with a hint of cinnamon and honey
mashed potatoes and peas (GF gravy optional - corn starch in broth until thick)
GF/CF/EF Bread with:
a.) Peanut butter and Banana
b.) Cinnamon and Honey
c.) Grilled with Rice cheese
d.) Ham, lettuce, rice cheese and a little mustard
Corn Tortilla with
a.) Hotdog and a safe condiment (mustard/catsup)
b.) burger, lettuce and rice cheese
c.) self seasoned taco meat (oregano, cumin, red pepper, onion, garlic, etc.)
d.) grilled veggies, brown rice and a wee bit of vinaigrette for flavor

I'm in a bit of a brain fog right now, so I will have to post more later, but how does he like Spinach? My kids love Spinach wraps. DD takes these to school in place of sandwhiches. You can use anything of his choice, my kids like peanut butter spread on the leaf than roll it. The pb helps it stay together.

I'm in the same boat. Only... we decided to hold my daughter back this year. She's not yet casein free, but could very well be soon. I've been reading through the suggestions and I just have to tell you how very lucky you are that your child can have peanut butter. I'd give anything if my kids could eat it. But, alas...that's one of our "big ones." It's soooo frustrating.
Tuna, as long as it's the chunk light packed stuff in cans - is ok to eat. You certainly don't want to feed it to your child ALL the time. But, the Albacore is the one you really want to steer clear of.
If we end up making that dreaded decision, I may "seek you out" to help me with the casein issue. My daughter is allergic to seemingly everything under the sun AND she was just dx with ADHD. Her pediatrician is afraid that if we restrict her diet much more...she'll have to turn into a meat eating caveman. LOL! (She won't eat meat as it is) |

Hi Kris,
This might be short, since I just broke my arm & can't type. Feel free to ask me any time about the casein or other food issues. i've heard dye is a big one for ADHD. Peter reacts almost immediately to dyes, and usually screams for about a week until it's out of his system. Some digestive enzymes we've found help a little when we have a food "mistake." There are also enzymes for gluten/casein if you want to try those before trying the casein free diet. I think Houston Nutraceuticals makes those.
You might want to check out Dr. Yasko's program for the ADHD. She works mostly with autism, but she's taylored her program also for ADHD. It's not the least expensive approach, but if you want serious results, it's the best approach, in my opinion!! It's also the place where many parents end up after spending a fortune on things that didn't work!!

Kris,
Can your dd have soy? I can't remember.. anyway, if she can, I've found this Soy Nut Butter you may be interested in. It's made in a Peanut Free Facility. They have different flavors, and such, one of them being Chocolate, that and the unsweetened original is also corn free for my ds (he's not peanut free, but he's not allowed peanuts when my child care boy who's allergic is here)
Anyway, again, I'm not sure on the soy status but hopefully it'll work! _________________ Kristie M.
