I ran across this recipe in my searching. My niece is absolutely hooked on chicken nuggets as many kids are. Here is a GF chicken nugget recipe. My husband really liked them. However my niece was not over so they did not get the kid taste test. It is also a very easy recipe. I got it off of recipezaar and it had many 5 star reviews from moms. You could use baked chips and butter buds to make it a little "healthier" Rolling Eyes
But chicken nuggets are not exactly known for their health value.

Potato Chip Chicken Nuggets ( any Flavor)

2 cups of your favorite potato chips (any kind you like I used plain and BBQ)
1 egg
2 tablespoons milk
6 chicken breasts, fillets cut into 1 1/2 inch cubes
1/3 cup butter, melted

Preheat~ oven to 350* Spread the crushed potato chips in shallow dish.
Beat together the egg & milk in a shallow bowl.
Dip the chicken cubes into egg mixture & then dredge them in the chips.
Place the chicken nuggets on a baking sheet & drizzle with melted butter.
Bake for 15-18 minutes or untill golden brown.
The Nuggets can be frozen after baking!
SERVE: (with your favorite sauce).

A couple of years ago I was watching Paula Deen and she made chicken nuggets with potato chip crust. Of course, I started craving chicken tenders so I gave the recipe a shot. The recipe was very similar to what you posted. I wonder if they're the same. I only made them the one time and I'm certain I don't have that recipe any longer.

I am not sure if it is the same. The poster on recipezaar did not say exactly where she got it from, although it does say that she saw it on TV so it is very possible that it is the same recipe.

I wonder if Paula Deen got her recipe from my jr. high Home Ec teacher. She gave us the same coating recipe for oven fried chicken back in the early 70's. I remember making it a lot because my Dad had/has CD, but somewhere along the way it fell out of use.

Woodyzee, I'm glad you posted it so I can start using it again. My daughter will be happy for an easy baked chicken tenders recipe.

As I recall, I added onion powder, garlic powder and pepper to tbe crushed potato chips. Oooohhhh, I bet Parmesan Cheese would be good, too!

I was just considering making this using smashed up cool ranch doritos.

A friend of mine makes a tasty cheeze-it chicken with smashed up cheese-its.

If it turns out GF and tasty i will post up some relative cooking info.

I know I am bringing up an old post BUT....

Dean loves his crumbed fried chicken. we haven't found anything that was good as yet.. gluten free crumbs have no taste and seasnoning it always worked out wrong.

tomorrow we have Chicken breast crumbed in Chippies... a great way to use the up 1/2 pack of crinkle cut cips wehave here.

I will let you know how it goes down.

this worked well. Dean is aking for more tomorrow night.

Thechicken to crumb ratio could be done better (might try smaller cubbes next time)
We will look for some flavour alternatves for the chips as we have only found plain here as yet.

It's a work in progress.
