I adapted it from the recipe on the back of the Hersheys Mint Chocolate chips bag. I have also made them with peanut butter chips and white chocolate chips and macadamia nuts and they were just as great.
Double Chocolate Mint Cookies
Ingredients:
2/3 cup butter or margarine, softened
1 cup sugar
1 egg
1 teaspoon GF vanilla extract
1 cup Bette Hagman four flour bean mix
3/4 teaspoon xanthan gum
1/2 cup GF Cocoa
1/2 teaspoon baking soda
1/4 teaspoon salt
1-1/4 cups GF Mint Chocolate Chips (I used Hersheys)
Directions:
1. Heat oven to 350°F.
2. Beat butter and sugar in large bowl until creamy. Add egg and vanilla; beat well. Stir together flour, xanthan gum, cocoa, baking soda and salt; gradually add to butter mixture, beating well. Stir in mint chocolate chips. Drop by rounded teaspoons onto cookie sheet lined with parchment paper.
3. Bake 10 - 12 minutes or just until set; do not overbake. Let them cool a few minutes before you try to take them off the cookie sheet - if you don't they will fall apart. remove from cookie sheet to wire rack. Cool completely. About 3 dozen cookies.
