This recipe is from one of my favorite cookbooks both pre- and post- diagnosis. It is called Marnie's Kitchen Shortcuts (ISBN 031214119X). I'm not sure if it is in print anymore, but you may be able to get it from the library.
Marnie's cream of "anything" soup mix
1/4 cup dry milk powder (I use non-instant, but instant will also work)
4 teaspoons cornstarch
1.5 teaspoons GF chicken boullion (I use Better Than Boullion)
1 teaspoon dried onion flakes
Dash thyme
Dash dill weed
Dash celery salt
Mix all ingredients and store in snack-size plastic baggies in the refrigerator. To use, combine with 1.25 cups water to make the eguivalent of 1 can condensed cream of chicken soup. If you want to make cream of mushroom, add some chopped mushrooms. Add chopped celery for cream of celery.
I use this recipe to make tuna casseroles and chicken pot pies a lot. One of the things I missed the most when I got diagnosed was convenience foods like cream of chicken soup. If I do this up in advance, it is really fast.
