Simple Sweet Acorn Squash
Squash prepared this way is sweet and satisfying. A nice lunch disguised as dessert. There is no other dish that tastes so quintessentially like fall to me.
Ingredients
One Acorn Squash
*Peanut Butter
Brown Sugar
Cinnamon
Nutmeg
Directions
Cut Squash in half from top to bottom.
Scoop out seeds.
Put flat side down in a glass baking dish with a shallow amount of water.
Put in the oven and bake on 375 degrees until flesh is soft when poked with a fork.
Remove from oven and drain water (be careful it's hot!)
Flip squash over and place back in baking dish.
Put a scoop of peanut butter into hollow where seeds used to be.
Sprinkle with brown sugar (to taste) cinnamon and nutmeg.
Place under the broiler for 2-5 minutes; keep an eye on it so it doesn't burn.
Take out once the brown sugar has melted and is bubbling slightly.
No dish required, eat with a spoon right out of the skin!
*Sorry this is not so allergy friendly with the peanut butter. It can be made with other kinds of butters or you can skip the peanut butter all together and just use the brown sugar, cinnamon and nutmeg. _________________ Cheers!
