One of the things I've missed most since going GF is pecan pie. I combined two recipies to make the following YUMMY dessert. I served it to my family - I am the only GF one - and everyone LOVED it!!

Hope you all love it too!

Coconut Pecan Pie

Crust:
1 ½ cups shredded coconut
¼ cup chopped pecans
2 tablespoons butter or margarine, melted

Filling:
3 eggs, beaten
1 cup rice syrup
¼ cup honey or maple syrup
¼ cup melted butter or margarine
1 ¼ cups pecans

Preheat oven to 325. Grease a 8” pie plate.
In a small plastic bag, combine the coconut and ¼ chopped pecans. Pour in the melted butter and work with your hands until the butter is distributed evenly. Pat mixture into the prepared pan. Bake for 15 minutes. Remove and raise oven temp to 350.

Beat eggs in a medium mixing bowl. Add rice syrup, honey and melted butter and mix. Add pecans and mix again. Pour into pie plate with pecan coconut crust and arrange full pecan halves on top of pie. Bake at 350 for about 50 minutes.

Serves 8 (or 16 – depending on how big you slice it!!)

Hey, my oven doesn't have "The temperature of the sun" setting. Is your oven one of those new fusion powered ones I keep hearing about?

Yup - fusion powered. Makes it finish in no time. Wink

This is what happens when you copy and paste a post from another thread and don't actually read what's in it. Wink

I have made the edits and corrected the oven temperature. No longer fusion based temps. Wink
