I get to make the pumpkin pie for my in-laws T-day dinner this year. I have a SIL who is lactose intollerant. Anyone ever made a dairy free pumpkin pie? I have a crust recipe already, but I need a recipe for the filling - all my recipes have either condensed or evaporated milk.

Ditto x 2 on the coconut milk suggestion. Another option would be rice or soy milk.

Duh! I forgot about the lactose free milk. They sell it in quart size containers or larger. Because my grandmother is lactose intollerant, I normally buy a container for holidays and use it for baked goods and other cooked items(mashed potatoes, etc) that need milk. Whatever is leftover I send home with my grandmother.

I have been going through allergy diet sites, and here is a replacement for evaporated milk; 1 c. light cream alternative or dairy free coffee creamer (carefully check ingredients, many do have milk proteins)
1 c. rice or soy concentrate, undiluted
soy, rice, or non-dairy powder mixed double strength to equal 1 c.
this is the recipe I am going to try; 1 envelope unflavored gelatin
1/3 c water
2/3 c dairy free milk substitute
2 c (1 can) pumpkin
1/2 c brown sugar
1/4 c sugar
1 tsp. cinnamon
1/2 tsp ginger
1/2 tsp. salt _________________ Dear Lord, Please help me help my stupid self. |

| i made a dairy and gluten free pumpkin pie without tofu for thanksgiving. if you dont find a recipe, let me know and i'll post it. everyone said it tasted exact the same. |

[my pumpkin pie]
2 c. fresh or canned pumpkin, pureed (NOT pie filling)
2/3 c. Sucanat
1/2 c. unsweetened soymilk
1 c. water
6 tbsp. cornstarch
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. cloves
1/2 tsp. salt
crust:
1/4 c. teff flour
3/4 c. Mesa Sunrise cereal, crunched
3 tbsp. vegetable oil
2 tbsp. soymilk
2 tbsp. Sucanat
1 tsp. salt
1/4 tsp. xantham gum
mix crust ingredients together, and press into lightly oiled pie plate. Bake at 350F for
10 minutes. remove and let cool.
meanwhile, in a saucepan, combine pumpkin, Sucanat and spices. Add water and milk, and bring to a boil,
then add cornstarch. Boil again, then simmer until thickened.
once cooled, add into crust, and bake at 375 for 30 minutes. |
