Really rich and yummy - easy too! The green of the mint chips was great, but you could also substitute for the mint and semi-sweet by using all chocolate mint chips.
1/4 cup butter
2 cups crushed GF chocolate sandwich cookie crumbs (I use MI-Del Double Chocolate)
1 1/2 cups chopped walnuts
1 cup flaked coconut
1 can Condensed Milk (I used fat-free)
3/4 cup semi-sweet chocolate chips
3/4 cup mint baking chips (I used Guittard)
PREHEAT oven to 350° F.
MELT butter in 13 x 9-inch baking pan in oven; remove from oven. Sprinkle cookie crumbs over butter. Stir well; press mixture onto bottom of pan. Sprinkle with nuts and coconut. Pour sweetened condensed milk evenly over top. Sprinkle with morsels; press down slightly.
BAKE for 20 to 25 minutes or until coconut is light golden brown. Cool completely in pan on wire rack. Cut into 24 bars. _________________ -Colleen

Sounds pretty good.
Condensed milk is great for this type of thing... makes a good "binder" of sorts. I have made a few brownies using an approach like this, and your ingredient list looks like it'd make a nice sweet and tasty (and probably a bit chewy) bar with plenty of flavor and texture. Yet another recipe I'll need to make time to try. Thanks for posting. _________________ Mike
