Really rich and yummy - easy too! The green of the mint chips was great, but you could also substitute for the mint and semi-sweet by using all chocolate mint chips.

1/4 cup butter
2 cups crushed GF chocolate sandwich cookie crumbs (I use MI-Del Double Chocolate)
1 1/2 cups chopped walnuts
1 cup flaked coconut
1 can Condensed Milk (I used fat-free)
3/4 cup semi-sweet chocolate chips
3/4 cup mint baking chips (I used Guittard)

PREHEAT oven to 350° F.

MELT butter in 13 x 9-inch baking pan in oven; remove from oven. Sprinkle cookie crumbs over butter. Stir well; press mixture onto bottom of pan. Sprinkle with nuts and coconut. Pour sweetened condensed milk evenly over top. Sprinkle with morsels; press down slightly.

BAKE for 20 to 25 minutes or until coconut is light golden brown. Cool completely in pan on wire rack. Cut into 24 bars.

Sounds pretty good.

Condensed milk is great for this type of thing... makes a good "binder" of sorts. I have made a few brownies using an approach like this, and your ingredient list looks like it'd make a nice sweet and tasty (and probably a bit chewy) bar with plenty of flavor and texture. Yet another recipe I'll need to make time to try. Thanks for posting.
