This is AWESOME. If any of you have ever eaten at "Cafe Rio" or "Costa Azule" You will LOVE this!!!!!!!!!!!!! Very Happy Very Happy
You could make the homemade " GF Wheat style tortilla's" That is on another thread and make them into sweet pork burrito's with black beans , lime rice, cheese, Gf enchilada sauce, fresh salsa. Or make the Salad dressing put meat , black beans,cheese, lime rice and lettuce, salad dressing and make a salad.



Pulled Sweet Pork

3-4 lb pork roast
1 can coke
2 cups brown sugar
1 16 oz bottle salsa

Put your roast in the crock pot, fill crock pot halfway up with water. Cook on high for 5 hours. Drain off water, cut pork into thirds. Mix coke, sugar, and salsa together, pour on top of the pork. Cook an additional 3 hours on high. Shred pork with fork, return to crock pot. Leave on low ‘til ready to serve.


Lime Cilantro Rice

1 lb long grain rice (3 cups)
juice of 2 limes
bunch cilantro
4 cloves garlic

Chop garlic and cilantro. Heat 2 tbsp oil in skillet, add rice, garlic, and cilantro. Saute 3-5 minutes. Transfer to pot. Put 4 c water and lime juice in pot with rice. Bring water to boil, reduce heat to low, cover for 20-25 minutes. Take off heat and keep covered until ready to serve.

Creamy Tomatillo Salad Dressing
1 pkg ranch buttermilk salad dressing mix
1 C buttermilk
1 C mayonnaise
3 tomatillos
2 cloves garlic
1 C fresh cilantro
½ tsp cayenne pepper

Blend all ingredients in blender.
