Yeah! I'm so happy...I tried making my cherry cobbler recipe using Pamela's baking mix and it turned out great! Now I'm sure some of you more experienced GF bakers could just use your own flour mix and get great results but since this was my first time trying to adapt a non GF recipe I thought I'd use a pre made mix just to be on the safe side. Anyway, here's the recipe in case anyone else would like to try it.

1 cup plus 1 Tbs. GF flour mix (the original recipe calls for 1 cup of flour but that was a bit too wet so I added the additonal Tbs.)

1/2 cup sugar

2 tsp. baking powder

1/4 tsp. salt (because I used the Pamela's mix I omitted the salt and only used 1 tsp. baking powder)

Using a fork, mix this together in the bottom of an 8 x 8 inch baking pan.

Cut in 1/4 cup of softened butter (use the fork for this) till the mixture resembles course crumbs.

Add 1/2 cup of milk and mix just until blended. Spread evenly in the pan.

On top of this put 2 cups of canned tart cherries, drained. You could really use any fruit you like. I've used cherries and peaches or just peaches, but any favorite fruit will work.

Now this is the different part, I promise this is the way the recipe is supposed to be! LOL

On top of the fruit pour 1 cup of fruit juice (since I had some in the fridge already, I also added a splash of grenadine syrup, but this isn't necessary for the recipe to turn out well). I use Juicy Juice cherry or punch flavor. Then pour 1/2 cup of sugar evenly over the juice. Put into a preheated 350 degree oven and bake 40-45 minutes or until the top is brown and bubbly. What happens when it bakes is the fruit ends up on the bottom and a crust will form on the top.

This is delicious with whipped topping or vanilla ice cream. I've just polished off my second piece!! Enjoy!

Congrats on your baking success! How about posting the recipe in the new recipe section so it doesn't get lost over here, if of course you don't mind.
