Basic Vinaigrette
1/4 cup vinegar of your choice (balsamic, red wine, tarragon, etc.)
1 teaspoon dijon mustard
a couple turns of the pepper mill
a pinch of sea salt or kosher salt
1/2 cup olive oil
Notes: Sometimes I add a bit of crushed garlic, chopped fresh herbs or grated cheese like parmesan.
Mix the first 4 ingredients together in a high sided bowl with a whisk. Drizzle in the olive oil and whisk until the salad dressing has emulsified, or becomes one unit. This recipe is basically 1 part vinegar to 2 parts olive oil but some people like 1 part vinegar to 3 or 4 parts olive oil. Just try it until you like it. If you add more olive oil you may need more mustard. The role of the mustard is to help the mixture emulsify. I keep it in the fridge for up to a week. It only takes 2 or 3 minutes to make. |
