Has anyone ever made gluten-free jelly roll (also called Swiss Roll and there are other names I think. It's sponge caked baked in a jelly roll pan or cookie sheet with sides and rolled up around a filling.)

I've made GF angel food cake so I think this is do-able, but I'm looking for someone who's tried this before.

I made a pumpkin jelly roll with a cream-cheese filling a year or so ago. It worked great. I can try to dig up the recipe if you want. It wasn't any harder to make than my pre-GF jelly rolls.

I have wanted to make one of these. I have a cook book by I think Annalise Robbens that has great recipes in them. She has a jelly roll that I wanted to modify and use whipping cream for MrP (he can't have jelly any more).

Pumpkin isn't at all what I was thinking of, but I like the idea. Please post!

GF baking with pumpkin always seems to work really well for me. Things keep for longer and taste so good.

i baked the sheet cake today, using the recipe for sponge cake from The Gluten-Free Gourmet, but baking it in a jelly roll pan. It's rolled up in a tea towel right now, and tomorrow I'm going to fill it with whipped cream mixed with raspberries. I'm having a bunch of people over for afternoon tea tomorrow and this is the "fancy dessert" for the menu.
