Here's a recipe for Sugar Cookies. I neither eat nor bake Sugar Cookies, but they are a staple at my mother-in-law's house at Christmas. She made them, iced & decorated them (checking all labels, of course) and says you can't tell the difference between these and the usual ones she makes. From Sheri L. Sanderson's "Incredible Edible Gluten-Free Food for Kids" cookbook.
Gluten Free Sugar Cookies
1/3 cup margarine
1/3 cup shortening
1 cup rice flour
1 tsp xanthan gum
1 tsp unflavoured gelatin
1 egg
3/4 cup sugar
1 tbsp milk
2 tsp baking powder
1 tsp vanilla
1/4 tsp salt (scant)
1/2 cup tapioca starch
1/2 cup potato starch
preheat oven to 375F
In a large bowl, beat margarine and shortening until creamy.
Add rice flour, xanthan gum, gelatin, egg, sugar, milk, baking powder, vanilla and salt. Beat well.
Add tapioca starch and potato starch. Beat until well combined.
Cover with plastic wrap and refrigerate for at least three hours.
Divide the dough in half and chill the unused portion of the dough until needed.
On a lightly rice-floured surface, roll half of the dough at a time, to 1/8” thick. Cut into desired shapes and place on an ungreased cookie sheet. (if the dough becomes sticky, return to the fridge to chill again.)
Bake at 375F for 7-8 minutes (for 2 ½ inch cookies; less for smaller ones, more for larger ones) or until the edges are firm and bottoms are very lightly browned. Cool on a wire rack.

What do you use for the shortening? I always thought margarine and shortening were prettty much the same. _________________ Kim --

Margarine = I Can't Believe it's Not Butter
Shortening = Crisco

Don't look to me for a TNT. I don't even like sugar cookies!
(Oh, I'm the OP anyway, so I guess it's irrelevant.)

| I want to make this recipe for Valentine's Day...will cut them into heart shapes and decorate with frosting and colored sugar. Question is, can I substitute butter for the margarine and lard for the shortening and still have them turn out alright? Just can't bring myself to use the hydrogenated stuff to bake with. Thanks! I haven't tried them with butter. Maybe you could make 1/2 batch and try it?
I don't use hydrogenated shortening. I use the non-hydrogenated kind. Crisco makes one and so does Spectrum Naturals. Smart Balance makes one too, but it is not available in my part of the country. The non trans-fat kinds are more expensive, but health is worth it, IMO. _________________ -Colleen

Absolutely a TNT recipe! I just tried these this afternoon for the first time and they're very good! They're light and crisp and taste just like a "regular" sugar cookie. I also used butter (instead of margarine) and didn't have the luxury to let the dough set in the fridge for three hours and they came out just beautiful anyway! I love a recipe that defies the cook! The kids will be here in an hour to go sprinkle and icing crazy! Weeee..... _________________ Cheers!

More cookies to try, eh? I think I've made 8-9 batches of cookies in the last 10 days. Thanksfully 95% have been given away!
