3 C. cooked rice
2 eggs
3 T tapioca flour
1 TBLS vanilla
1/4 C milk (or milk substitute)
2 TBLS sugar
Pinch of salt
Mix all ingredients together thoroughly. (If using a high quality vanilla, I would cut back the amount a little)
Drop onto a lightly greased pan and fry (and flip) 'til both sides are nicely browned. Serve with sugar, syrup or jam.
These are quite heavy and filling and a good way to use up left over rice
