I just whipped these up as I was craving something chewy. I haven't made this recipe in years but since it translates so easily to GF I thought I would post it. I used the Erewhon brand organic brown rice cereal for these.

1 cup light corn syrup
1 cup peanut butter
1 cup sugar

Put this in a large pot on the stove and heat till sugar melts. Add six cups of the rice cereal and stir to coat.

Pour into a well greased 10 x 15 inch baking pan (the kind with sides) and spread with spatula or just use your fingers.

Melt 1 cup of semi sweet choc. chips and 1 cup of butterscotch chips (check to make sure the butterscotch chips are GF) in a small bowl in the microwave. Spread this evenly over the cereal.

Put in fridge to cool and cut into squares. These are so chewy and very satisfying if you're craving something chocolately or peanut buttery, lol.

For those new to the GF lifestyle. Kelloggs Rice Krispies are NOT GF. They contain malt [as do many of the mainstream cereals].

I make these but I sub rice syrup for corn syrup--not quite as sweet. You can use alternative nut butters, too. I use the Koala Crisp cereal in it because any extra chocolate is great, IMO.

You can make really great rice krispie like treats using Fruity pebbles also, my kids always liked them better than the regular kind.

You can also lightly crush some Rice Chex and use them. YUM!

Not any of the Krispies made by Kelloggs. They all have Barley Malt in them. Post Fruity and Cocoa pebbles are safe.

Koala Krisp is actually made by Envirokids, not Kellogs. Koala Krisp is GF.
