Ok TEC - I need to make something to eat for the rest of the week, and since you are so resourceful and good at throwing together dinner I'm putting you on the spot.

How would you prepare:

1 lb. boneless, skinless chicken breast
1 qt. GF chicken broth
1 med. zucchini
1 carrot
1 red bell pepper
1 white onion
garlic

(optional: lentils or GF pasta or red potato)

Using only the ingredients listed above and since the chicken is boneless skinless I would make soup and add some lentils or pasta(depending on the pasta).

Now if a few pantry staples are allowed--like vinegar(balsamic, red wine, etc.), olive oil, etc. --I might have a couple of more ideas.

Baked Chicken with Veggies
Slice the onion, bell pepper & (zuchhini) and place in the bottom of a baking dish. Add a couple of cloves of garlic--just crushed, not minced. Season veggies with salt and pepper. Add a bit of the chicken stock to the pan...maybe a quarter of a cup of so. Then place the chicken on top. Season with salt and pepper, cover with a lid or aluminum foil and bake until cooked through. Serve with potatoes?

Warm Lentil Salad with Vinaigrette-
1. Cook lentils with some herbs, pepper, 1/2 onion and carrot.
2. Make a vinaigrette using red wine vinegar (white wine vinegar would even work), olive oil, mustard, salt and fresh pepper to taste.
3. Chop the veggies. Saute the chicken in a skillet. When done remove and deglaze the pan using the stock. Then add the other half of the onion and red pepper. Once those are slightly soft add in the zucchini. Being careful not to overcook the zucchini!
4. Drain lentils. Discard carrots and onion. Season with a teaspoon or so of salt. Add a good dash of vinegar to the warm lentils and taste. [If lentils are cooked with salt they normally don't get tender enough.] Stir in the veggies and chicken. Add enough vinaigrette to taste.

I have two more ideas but I must go see a horse about a man...

You could do something similar with Pork chops. I haven't tried it with bell pepper, but on the rare occaion in which I serve pork, this is how I make it..

skim fat off of the pork chops. Brown on both sides with enough water to fill the bottom of the pan.
add chicken broth (adds great flavor to the Pork Chops)
add sliced carrot, sliced zucchini, quatered onion & garlic. I usually throw in cut potoatos as well. Cover and cook until meat is done and vegetables are to liking.

Actually that's not what I meant. Embarassed I just meant that I had to do some work and didn't have enough time to write my other thoughts. But the horse line was much more interesting to me. I'm glad to know what it REALLY means--I won't use it anymore.

While I was in the car I realized that I meant to write chicken stock or some white wine, but I never added the white wine to my post. A little thyme might even pep up the flavors a bit. It may end up needing a bit more than 1/4 cup liquid if you use a larger baking dish. The liquid will just keep the veggies from sticking to the pan.

I make baked chicken dish often with a cut up whole chicken and 2 onions and 5-6ish fresh tomatoes. I've done it before using 4-5 red peppers and 2 onions and it was delicious! When I make it with the whole chicken pieces, I don't cover it so the skin gets nice and crisp.

Hopefully it turns out!

Yep, horse about a man. I stole that line from the film Something to Talk About. It cracked me up when Kyra Sedgewick's character used it in the movie so I adopted it. I'll now retire it.
