2 lb lean boneless pork in 3/4" cubes
3 T GF flour of your choice
1 c. water
2 T ground cumin
3/4 t chili powder
1/2 t dried oregano
1/2 t garlic powder
3 medium onions, sliced thin
2 cans diced green chiles
3/4 c. roasted red pepper strips
1 (15 oz) can black beans, drained and rinsed
In crock pot, toss pork with flour until coated. Stir in water, cumin, chili powder, oregano, garlic, onion, and 1/2 of chilies. Mix well. Cover and cook on LOW 6 hours, or until pork is very tender, stirring twice during cooking time. Increase to HIGH. Stir in remaining chiles, red pepper strips, and black beans. Cover and cook 20 to 30 minutes longer. _________________
