Hi all. I haven't been around a while. My dear DIL, who is pregnant, was just diagnosed with gestational diabetes. Which means no sweets for her unless they are sugar free. Which is fine for the remaining 3 months of her pregnancy,,,, except that we are having a baby shower for her in 2 weeks and so I need to come up with a chocolate cake that is GF adn sugar free. I feel challenged enough with it being GF, let along sugar free. I was looking at the Red Velvet cake recipe and was thinking about making that using agave nectar in place of the sugar. I was also thinking about making it with Pam's flour mix. Ok,, so any thoughts out there? Any suggestions would be GREATLY appreciated!!!! ~ Cindy

Another option might be to use Splenda or Splenda for Baking for the sugar if that is apporpriate for your daughter's diet. If you did that then you could still use the Red Velvet Cake recipe.

Regarding the Red Velvet Cake, there are at least 2 on the site. One is the Robin Ryberg recipe that I posted which calls for a bottle of red food coloring. I've had mixed results using this recipe and I don't know why. I just can't figure it out.

The other Mrs. P posted calls for beets. I haven't tried this recipe but she has had good luck with it.

My understandings is that Maple syrup substituted works great. Its not SF, but the Maple doesn't mess with the glycemic index like white cane sugar. I can't remember how much you are to reduce the liquid in the cake though.

I know you are looking for a cake recipe, but I posted a Chocolate Truffle recipe in the recipes section that is really good. There is no sugar other than what is in the bittersweet chocolate, and the carb count is quite low.
