Hey Nancw,
Yeah, I eat chicken, but I truly have an issue with the raw stuff...
And it kinda stinks because I've been relying on plain grilled chicken for lunch in my cafeteria an work and I'm getting SO tired of PLAIN chicken! YUCK!
All of these recipes sound really great, but I just need someone to cook the chicken for me...  _________________ ~Torrey

Hey Torrey, is it the fact that it's raw? Or do you just not like handling it? If you don't like handling it, try putting on some latex gloves or using a fork and a knife to cut the meat.
You could also try cooking with your boyfriend. Cooking together is very romantic...if you don't have school/work/plans within an hour.  _________________ Ostrich :>--O==={

Yeah, it's both, actually...any raw meat makes my toes curl, but especially chicken...the whole bacteria thing creeps me out...

Have you tried replacing meat with tofu, especially chicken? DH and I do this with our "chicken" fried rice. I actually like it better with tofu...it has a much lighter texture. _________________ Ostrich :>--O==={

Have you tried using the canned chicken or chicken in a pouch (like tuna)?
The Valley Fresh brand from Hormel says on its website:

I've never seen that Hormel chicken (but then again, I haven't looked for it! ), but I am going to check out that link!

Not to go off on a tangent here, but I just want you guys to know that I picked up some chicken breasts, fully cooked, that come in packages like the tuna.
I haven't tried them yet, but I bought 3 flavors and I checked all of the labels--no gluten or gluten-containing ingredients!
BBQ, Garlic & Herb, and another one I can't remember...I'll go downstairs in a bit and get more details, but I just wanted to say THANKS for the suggestions, Os and P.O.D.!!  _________________ ~Torrey

I modified the TEC Chicken tonight and it was darn good. Halfway through eating I realized I should have taken a picture because this was truly a food porn memory - colorful and delicious.
2-3 Boneless, skinless chicken breasts-halved
1 cup Pacific Foods Tomato and Red Pepper Soup (I am addicted to this stuff)
1/2 cup sliced carrots
1/3 cup sliced celery
1/4 cup chopped white onion
4 cloves garlic - crushed on top
Bake at 350 for 25-30 minutes in a baking dish (I used glass), covered with foil.
I served this with lentils - stirred in some chopped red bell pepper and white onion, a bit of black pepper and salt at the end of cooking, and some steamed asparagus.
Thanks TEC - my repertoire is expanding, and DH was duly impressed. He's in the kitchen cleaning up right now.  |
