I subscribe to Top Secret Recipes - www.topsecretrecipes.com - and last week's recipe sounded really good, and possibly really easy to make gf. The cake part is supposed to be heavier that traditional cake mixes, and though I have not yet attempted a gf cake, I seem to understand that they can come out heavier than gluten cakes. So, I will post the recipe here, and hope that one of you can help me convert it to gf.
(It's very long, with many steps, but sounds really decadent and not chocolate - a big bonus for my chocolate free Dad.)
Lemon Passion Cake
Cake:
1 ¾ cups ap flour
2 tsp. baking powder
½ cup butter, softened
1 cup sugar
4 eggs
½ tsp. vanilla
¼ cup lemon juice
¼ cup orange juice
Lemon Mousse Topping:
8 oz. cream cheese, softened
1 ¾ cups conf. sugar
3 Tbsp. lemon juice
1 drop yellow food coloring
1/3 cup heavy cream
Sweet Cream:
1 ½ cups half-and-half
1 14 oz. can sweetened condensed milk
Whipped Cream:
1 ¼ cups heavy cream
2 Tbsp. sugar
¼ tsp. vanilla
Garnish:
Caramel
Mint Leaves
INSTRUCTIONS:
1. Preheat oven to 350* F.
2. Sift together the flour and baking powder into a medium bowl. In a separate larger bowl, beat together softened butter and sugar for 1 minute. Add eggs and beat until mixture is a light yellow color. Mix in vanilla and juices.
3. Combine flour with wet mixture a little at a time while beating until batter is smooth. Be sure to scrape the sides of the bowl while mixing. Pour this batter into a 9”x9” baking pan and bake for 35 to 40 minutes or until the top begins to brown and a toothpick stuck in the center comes out clean. Let the cake cool.
4. As your cake is baking make the lemon mousse topping by beating the softened cream cheese with an electric mixer in a medium bowl until smooth. Add confectioner’s sugar a little at a time while blending with the electric mixer on low speed. When all the sugar is incorporated, add lemon juice and a drop of food coloring. In a separate bowl, beat 1/3 cup heavy cream until it forms stiff peaks. Fold this whipped cream into the cream cheese mixture until completely combined, then cover and chill.
5. Make sweet cream by combining the half-and-half with the sweetened condensed milk in a 4 cup measuring cup with a spout or a small pitcher. Cover and chill this as well.
6. Make whipped cream by combining 1 ¼ cups heavy cream, 2 Tbsp. sugar, and ¼ tsp. vanilla in a large bowl. Beat with an electric mixer on high speed until it forms stiff peaks. Cover and park this in the chiller, too.
7. When the cake is completely cool, slice it down the middle once, then across twice, creating 6 rectangular slices. Run a knife along the edges of the cake as well. Poke holes in the top of each slice of cake with a fork - one poke in the center of each piece will do the trick.
8. Pour the sweet cream mixture over the cake while it’s still in the pan. Frost the cake with the lemon mousse. Serve each slice on a plate that has been drizzled with caramel. Top each slice with whipped cream and a garnish of a couple mint leaves stuck into the whipped cream.
Makes 6 servings.

That does look like a good recipe. Not easy on the waistline, though! I would substitute either Bette Hagman basic GF mix or featherlight mix. I have included the flour mixes at the end. You will need about a teaspoon of xanthan gum. You will need to add something to make up the protein from the wheat flour. You already have plenty of eggs, so I would not add any more. You could either add some unflavored gelatin or almond meal or a tablespoon of egg replacer. I would also increase the baking powder.
Have fun if you decide to try it. It's kind of like a science experiment to try to convert a recipe. Here is how I would rewrite it. I'm sure some other people will have ideas.
Cake:
1 ¾ cups GF flour mix
3 tsp. baking powder
1 teaspoon xanthan gum
Protein additive of choice (unflavored gelatin, almond meal or egg replacer)
½ cup butter, softened
1 cup sugar
4 eggs
½ tsp. vanilla
¼ cup lemon juice
¼ cup orange juice

Bette Hagman featlerlight mix
1 cup rice flour
1 cup tapioca starch
1 cup cornstarch
1 tablespoon potato FLOUR (Not starch)
Bette Hagman GF mix
Two part white rice flour
Two thirds part potato starch
One third part tapioca flour _________________ -Colleen
