Does anyone know what causes bread to drop after it is taken out of the oven. I leave it cool for about 15 mins before I take it out of the pan and every time it does it. Any advise or suggestions would be helpful.

Bread may look done on the outside but still be undone in the middle. It needs to cook to an internal temperature of about 209 - 211 degrees. I bake my bread for the low end of what the recipe calls for and then take the temp with an instant-read thermometer. I add time in 5 minute increments to get it up to at least 209 degrees.

It could be too much water, too. I find that if I cam cooking a Bette Hagman recipe I always have to add less water than what the recipe calls for.

I am not an expert, but those are a few things you might want to play with. Hope this helps!
