I love it when an experiment comes out good! I didn't get as many of these as I would have liked because my DH and DD (non gf people) ate most of them.
I found these cookies tasted better about day 3 - the grittiness of the rice flour dissappeared. (The slight grittiness did not stop my family from eating them fresh) Maybe next time I'll try using sweet rice flour, like MrsP does.
These call for Heath Bits 'O Brickle baking pieces, which are a Hershey product. I called and they told me they were gluten free.
TOFFEE COOKIES
½ cup Butter, softened
1 cup Brown Sugar
1 Egg, lightly beaten
2 tsp. Vanilla
2 Tbsp. Milk
¾ cup White Rice Flour
1/3 cup Coconut Flour
2 Tbsp. Potato Starch
½ tsp. Baking Powder
½ tsp. Baking Soda
½ - 1 cup Heath Bits
1. Preheat oven to 350*.
2. In a mixing bowl, cream together butter and sugar till smooth. Add egg and beat until fluffy. Add vanilla and milk and beat well.
3. In a separate bowl, combine dry ingredients, except Heath bits.
4. Add dry ingredients to wet ingredients, and stir until combined. Stir in Heath bits.
5. Drop by teaspoonfuls onto a parchment paper lined cookie sheet. Bake 10 - 12 minutes, until lightly browned. Cool on wire rack.
Makes 3 dozen cookies. |

| Bob's Red Mill offers coconut flour. A health food store might be able to special order it for you, or you could order it directly from BRM but the shipping charges are incredible. |

I am not sure if this would help or not, but you might want to add about 1/2 tsp xanthan gum or guar to help with the grittyness of the cookie. (the ratio of the butter is high, but not many eggs.)
I have like the results of the sweet rice flour, so that is really all that I use either by itself or in the GF mixes. _________________

Next time I make them, I'll try the Xanthan Gum and the Sweet Rice Flour. They weren't terribly gritty, just enough to notice in the aftertaste.
I also thought I'd try them with some flaked coconut added. I'll let you know how they come out.
I got my coconut flour at the health food store. I'm pretty sure it was Bob's Red Mill. |
