| I don't buy a mix, but just brown ground beef, then add minced dried onion, garlic powder, chili powder, cumin, a smidge of salt, and a splash of water and simmer until the water evaporates. It is superb! |

| We prepare as Isto describes, and add a can of Rotel (tomatos and jalapenos) as the beef is almost done cooking. We use the Old El Paso White Corn taco shells and there are never any leftovers! |

I think the rotel tomatoes are not GF. I could be wrong but I got sick from it and when I read the ingredients before I ate it. I knew I was talking a chance but one of the ingredients mentioned (a firming agent). I remember questioning that but it was on a sunday and you can't call the company on a weekend. So I took a chance and got so sick.
The tacos that my kids love and I never have left overs in fact they fight over the last one. I put in grated onion and grated potato and fry the white or yellow corn tortilla in shape of a taco in any kind of oil. I have used olive oil. After that put cheese and pace picante sauce on it . Thats it. I have made it with taco seasoning from the Gluten free pantry but my family has always like it with no seasoning. Even before going gluten free. _________________ Melissa

| Thanks for the warning, Melissa. I haven't had any trouble with Rotel, but I'll check it out anyway. |

Rotel is a ConAgra Company...so reading the label will tell you all you need to know. My can of Milder Dice Tomatoes & Green Chilies say:
Tomatoes w/ juice, water, chopped green chili peppers, less than 2% of salt, citric acid, calcium chloride (a firming agent), spice.
I see no problems there.
Hi Melissa, good to see you again!! _________________ Al

Thanks Al. I ve have been here all the time. I never left. Just so busy I read mostly.
HMMM ....Must have been something else that made me sick that day. By the way That firming agent isn't flour based? What is it exactly do you know by any chance? _________________ Melissa

What about citric acid - while it's GF, some people have felt they have issues with it.
Glad you're still lurking. It's good to see that smilin' face of yours
http://en.wikipedia.org/wiki/Calcium_chloride
Calcium chloride is an ionic compound of calcium and chlorine. It is highly soluble in water and it is deliquescent. It is a salt that is solid at room temperature, and it behaves as a typical ionic halide. It has several common applications such as brine for refrigeration plants, ice and dust control on roads, and in cement. It can be produced directly from limestone, but large amounts are also produced as a by-product of the Solvay process. Because of its hygroscopic nature, it must be kept in tightly-sealed containers.
~
Calcium chloride tastes extremely salty and is used as an ingredient in some foods, especially pickles, to give a salty taste while not increasing the food's sodium content.
It's also used as an ingredient in canned vegetables to maintain firmness. _________________ Al

We use the Old El Paso spice mix and taco shells (DH uses flour tortillas). No problems. _________________ Ostrich :>--O==={

| I use Penzey's taco seasoning or Pace Picante to season the meat. I find that I prefer a taco salad with maybe some crushed tostitos. I find it easier to add GF avacado. |

Penzey's spices are indeed awesome. I'm fortunate to live within a short drivng distance of a few of their stores.
FWIW, at one time their taco seasoning was not gluten free. I have not checked the GF status recently. |

Oooh--Penzey's leaves the "other" spices in the dust quality wise. The last time I checked, they said that only the soup bases were not safe.
No fillers in anything else, just spices. _________________ The Love we withhold is the pain that we carry.

I too use El-paso spice and shells, Yummmmmm
I am now wanting to try a taco salad with tostitos and add the guac, yummm good idea. It took me a while to get used to avacado, as I didn't grow up on it, but once I was introduced, I can't get enough. _________________ Sarah |
