Ok, all of you baking experts, here's one for you. I want to try to re-create the Pamela's Baking Mix. I have used this for quite a few recipes and they've all turned out fabulous. My 4 lb. bag is almost gone and I can't see spending 16.00 to buy another bag when I have all of the ingredients in my cupboard...it's just a matter of figuring out proportions. So, here is the list of ingredients in the order listed on the bag.

brown rice flour
white rice flour
cultured buttermilk
natural almond meal
tapioca flour
sweet rice flour
potato starch
baking powder
baking soda
sea salt
xanthan gum

Any idea about proportions? Thanks!

I googled and didn't come up with anything. I think you're going to have to play around with the proportions. If it was me I would start with a pound of white rice flour and a pound of brown rice flour.

There is a bisquick type recipe in one of the Bette Hagman books. I think it's the original GF gourmet one. That might be a good place to start.

The Whole Foods by me sells the 4 pound bag for $6.00. I still can't believe that price, but that's what it said on the shelf and on my receipt.

All this flour stuff gets so confusing to me! I'm not a great cook to begin with now I have to learn to cook again!

Kind of a dumb question..... do you use the Pamela's baking mix in cakes, cookies.... etc... everything that you would use regular four for? And, do you use the same proportions as flour in recipes?

Not a dumb question at all. Pamela's baking mix is kind of like Bisquick. I use it for pancakes, banana bread, biscuits, and lots of other things. I have made the pie crust recipe that is on the bag, but I was not crazy about it. Check out the Pamela's website for more ideas. It is one of the few mixes I buy because it is so good and versatile.

Anybody had any luck recreating the Pamela's mix? I think Whole Foods figured out what a sweet deal they were giving me, because they raised the price on the big bag of Pamelas from $6.00 to $13.00. I can't afford that. THe Bette Hagman mix is good, but not as good as the Pamela's mix, IMO.

That's brutal! I wonder if they were accidentally selling it at cost??

I don't use Pamela's so I don't have any suggestions for recreating it. I keep a batch of the Four Flour Bean Mix and the Rice Flour Mix (white/brown, potato starch, tapioca starch) and use that for most things with great results. For what items do you normally use the Pamela's?

Success! I just posted a recipe over in the recipe forum. It works just as well as the Pamela's mix for a fraction of the price. I am soooo happy right now.
