I sort of combined two recipes into one and made this last night. This was my first attempt at making any sort of fried rice and it turned out really good.
2 cups basmati rice (could use any kind of asian rice you like)
2 eggs
3-4 tablespoons cooking oil
1/3-1/2 cup chicken stock
1 cup of any kind of vegetable combo you like. I just used frozen peas and carrots.
1/2 tablespoon sesame oil
1 1/2 lbs. cooked chicken, cut into cubes
1/3 cup GF soy sauce (I used San J)
Cook rice according to package directions. I have a rice cooker so that's what I use. Make it a little ahead of time as it needs to cool before making the rest of the recipe.
Over medium heat, cook the eggs in a little oil, use a fork to break up the yolks and just sort of scramble them in the pan. Remove the eggs from the pan and set aside. Use a paper towel to wipe out any egg that may have stuck to the pan.
If you're using any kind of raw vegetables, such as pea pods, celery, mushrooms ect., saute them in a little oil in the pan just until tender. Remove them from the pan and set aside.
Over medium high heat, add about 3 tablespoons of oil to the pan and put the rice in, stir to coat all of the rice. Add your chicken stock to the pan, a little at a time, continue stirring until the stock is absorbed by the rice.
Add your veggies to the pan, along with the chicken, sesame oil and soy sauce. Add the egg and stir till all is combined and everything is heated through.
This is a very versatile recipe as you could use any combination of veggies that you like. You could also use beef or ham instead of the chicken.
