Does anyone have a recipe for decent Mexican rice? My favorite mixes have wheat startch in 'em, so I'm back to the drawing board.

My family likes ours pretty mild... But all I do is substitute some tomato juice (home canned) for part of the water when cooking the rice. I think I used half water and half tomato juice for instant rice. Then I stir in some home canned salsa after the 5minutes is up -- you can make that as spicy as you'd like. Just warm back up. Top with some cheese and sour cream if desired. _________________ Kim --

I found a GF enchilada sauce using google, but now I cannot find it! I will look it up in my recipe notebook. I did find this one over at celiac.com
You can make it and then use it to make the spanish rice. _________________

Mahatma Spanish Rice is on their Gluten Free List. Easy, tasty and cheap!

I just add my favorite GF salsa when I cook plain rice from scratch. I might cut back just a touch on the water amount. When it is all cooked, I top it with cheese. It is the same way that I used to make it in the school cafeteria when I was cook there. Everybody loved it and didn't complain.

Thanks everyone! I didn't realize the Mahatma was GF...and I did wind up doing the salsa and cheese thing on plain rice. DH loved it too.  |

I've used a can of diced tomatoes that were pre-spiced for chili. I think there are a couple of brands available, but I liked the results.
I'll often put spice cubes in the rice cooker and some onion, chives, or whatever I feel like adding. Beef, parsley, chives, and celery seed, then melt cheese on top.
I personally like adding the boullion that are for pha (a vietnamese soup) but I've only found one store that carries them and I'm sure finding the spices that are in it wouldn't be too hard. _________________ Lauren
