Does anyone have a receipe for a ham casserole (a one dish meal)?
I have some old good ones, but they require breading.
I have left over ham that I would like to use.

Hey Toni,
Colleen posted this recipe for what she calls Mormon Potates and for what I call Funeral Potatoes. About once a year I make them and either add ham to them or serve them alongside ham. It's by no means low cal but they are so good. Colleen uses low fat sour cream; I don't. On the rare occasion I need a canned soup replacement, I use Basic White Sauce recipe and follow the directions for medium-thick and chicken sauce.
Another way to use leftover ham, if you still have the bone is to make a pot of split pea soup and add ham to it.
Sorry I don't have any other casserole ideas. I'm sure someone else will though. |

thanks, I'll see if one of those will work. I do have the ham bone, which I am saving for soup. And with the cold weather we are having, nows the time to cook it up!  |

You could put some ham chunks in a macaroni and cheese dish and eat it with a salad and havean entire meal made.
You could cut up the ham into small pieces and put it in a quiche.
6 eggs
1 tsp salt
1/2 cup milk
3 Tbs tapioca starch
3 Tbs GF flour (I used the sweet rice flour, potato starch/tapioca 3/2/1)
1 1/2 cups grated cheese
Mix in the blender and put in a pie plate and bake at 350 for about 30 minutes.
It is a crustless quiche.
(10 oz of spinach thawed and 1 small onion cooked in 2 TBs oil......layer in the above mix and it makes an excellent quiche without meat.) _________________

I ended up making split pea soup, which came out great. I've printed these recipes out for the future.
Question on the quiche, can I use all purpose GF flour?
Finally after 1 year, I'm starting to experiment with baking, using flours, etc. I loved trying out different recipes and baking yummy desserts, but I had completely gave it up. But, I'm ready to give it a go. _________________ Toni

I think that you could use the all purpose GF flour. I would still put the 3 T of tapioca starch/flour.
This would help to thicken the quiche. _________________
